Monday Menu of the Week: March 23, 2026
Monday Menu of the Week is here and I am ready! I grabbed one of my new thrifted coffee mugs this morning — it says “be kind” with the prettiest little flowers on it, and honestly it is making this Monday so much better already. Spring break is officially over, the kids are getting back into the groove, and I am excited about what we are cooking this week. Let me walk you through the Monday menu and give you a peek at everything I have planned for my crowd!

Sunday was a great start — we made Crock Pot Pork Chops and they were, as always, a huge hit with the family. If you haven’t tried that recipe yet, it is only two ingredients and it basically makes itself. Go check it out!
Tonight I am trying something new — the viral sushi bake. Now I know some of you just panicked at the word “sushi,” but hear me out. My kids actually love sushi, and this is a baked version with layers of rice, avocado, and imitation crab. It is crowd-friendly, it is fun, and we are going to find out together how the family likes it. I will keep you posted!
Tuesday is a very special day — my Livie turns 13! We are heading out to dinner to celebrate her birthday, so no cooking from me that night. I cannot believe I have all teenagers and young adults now. This phase of motherhood is something else.
Thursday I am making one of my all-time favorite recipes — my dad’s chili with cornbread. This is a recipe that is close to my heart, and making it for my crowd is one of my favorite things to do. There is something about sharing a recipe that came from your family that just makes the meal mean a little more.
And then to close out the week on Friday, I am making Cajun Chicken Pasta — another family favorite that always gets a great response around our table. It is a perfect Friday night dinner.
