Monday Menu of the Week — Easy Family Dinners to Steal This Week
Happy Monday, y’all! It is a big cooking week over here — and I mean BIG. I’ve got meals to make for my own crowd of seven, plus food for a friend who just moved, a friend who was in a car accident, and teacher appreciation week at my kids’ school. It is a lot. But honestly? I get to be in the kitchen a lot this week and I am completely here for it. My Monday menu meals are fairly basic this week — which is exactly how I like it when life gets full. Pull up a chair and steal my meal plan — I promise these are all easy, crowd-friendly, and absolutely delicious. Oh, and Jonathan crashed the video to show off his school outfit, his Goodwill water bottle, and his new Goodwill book. Because of course he did. 😄

This week I am cooking for my people AND for others — which is one of my favorite things to do. There is something so satisfying about filling up someone else’s table when they are going through a hard time. A friend who just moved and a friend recovering from a car accident both need some love this week, and food is how I show it. On top of that, it is teacher appreciation week at school, so I am baking for that too. My own family’s menu is keeping it simple and going back to the favorites — because when life is full, dinner still has to happen.
Here is what is on my menu this week:
Monday: Fish with honey garlic roasted carrots and baked potatoes
Tuesday: Pork fusion wraps — a brand new freezer recipe I have never tried before. I am so excited to share this one with y’all once I see how it turns out!
Thursday: Carne guisada steak tacos with crispy fried corn tortillas. My crowd asks for these constantly and I am not mad about it.
For teacher appreciation week: Two big Texas sheet cakes and a French toast casserole. Teachers deserve all of it.
Also for my family: Chicken and rice with the best green beans in the world — doing them stovetop this time instead of oven for a little twist. I will show y’all how that goes!
And the sourdough front: I am going to try to get Jason’s whole wheat sourdough going again this week with Free Willy 2, and I may do some baking with Pearl as well. It is a big week in the kitchen and I could not be happier about it.
Jonathan was my co-host for this video and he absolutely stole the show — school outfit, Pumas, ice water, and a brand new Goodwill book. He is the best.
