Daddy’s Famous Crockpot Chili is one of those recipes that lives in your memory long before it ever hits the pot. My daddy made this chili, and y’all — it is spectacularly delicious. Quick to throw together, slow cooked to perfection, and loaded with a secret ingredient that will absolutely knock your socks off. (Hint: it is NOT chocolate. I have very strong feelings about that.) This recipe is probably in the top five most complimented meals I make, and every single time I serve it, someone asks for the recipe. Now I’m sharing it with all of you. I load mine up with Jiffy cornbread on the side, and my family goes straight for the cheddar cheese and Fritos on top — the kind of meal that fills up a crowd and makes everyone at the table happy.

Daddy’s Famous Crockpot Chili
Start CookingIngredients
- 2 lbs ground beef or turkey
- 1 tsp garlic powder for browning the meat
- salt to taste (for browning the meat)
- black pepper to taste (for browning the meat)
- 2 packets chili seasoning mix
- 1 can (15 oz) tomato sauce
- 2 cups water
- 2 tbsp Better Than Bouillon beef base or substitute 2 cups beef broth
- 2 cans light red kidney beans undrained
- 2 cans dark red kidney beans undrained
- dried minced onion generous amount
- garlic powder to tastes (sprinkled over the top)
- chili powder to taste
- 1-2 tbsp ground cinnamon the secret ingredient!

Method Start Cooking
- Brown the ground beef in a skillet over medium heat, seasoning with garlic powder, salt, and pepper. Drain excess grease.
- Add the browned meat to the crockpot.
- Add the tomato sauce, water, and Better Than Bouillon beef base (or beef broth). Stir to combine.
- Add all four cans of kidney beans — do not drain unless you prefer a thicker chili.
- Add a generous amount of dried minced onion and sprinkle garlic powder liberally over the top.
- Add chili powder and both packets of chili seasoning mix. Stir everything together.
- Add 1–2 tablespoons of cinnamon — this is the secret ingredient that makes this chili absolutely spectacular!
- Cook on HIGH for 4 hours or LOW for 8 hours.
- Serve topped with shredded cheddar cheese and Fritos, with Jiffy cornbread on the side.

– Stephanie does not drain her kidney beans. The liquid from the cans adds to the depth and sauciness of the chili. But you absolutely can drain them if you prefer a thicker chili.
– To stretch the recipe further: use 1 lb of beef and add a third can each of light and dark kidney beans. More beans, more servings, lower cost.
– Ground turkey works just as well as ground beef if you want a lighter option.

My daddy’s chili has been part of our family for as long as I can remember, and now it’s part of mine. I make this daddy’s famous crockpot chili for Sunday dinners, for gatherings, for cold nights when my family of seven needs something warm and filling that practically makes itself. The crockpot does all the work — you just have to remember to brown the meat first, dump everything in, and walk away. It’s the same Crock-Pot slow cooker I swear by for pretty much everything I make.
The secret ingredient is cinnamon, and before you make a face — just trust me on this one. It is exactly what my daddy always put in it, and it is the one thing that makes people take a bite, look up, and say “what IS that?” It does not make the chili taste like cinnamon. It just makes it taste deeper and richer and better than any other chili you have ever had. I promise you.
The other quiet hero is Better Than Bouillon beef base . A spoonful goes into the pot and the whole chili tastes like it simmered for days, even though the crockpot did the work. Between the cinnamon and the beef base, this is the chili that gets the recipe request every single time.

A Few Things That Make Daddy’s Famous Crockpot Chili Even Easier
- Brown the meat first — don’t skip it. The crockpot does almost everything, but searing the ground beef in a skillet before it goes in the pot is the difference between flavorful chili and bland chili. Five minutes of browning gives you all the savory depth that slow cooking on its own can’t.
- Stretch the recipe with beans for a budget-friendly batch. If you want more beans and less meat, swap down to one pound of ground beef and use three cans each of light and dark kidney beans instead of two. It stretches beautifully and is a little easier on the grocery bill when you’re feeding a crowd.
- Don’t drain the kidney beans. The liquid from the cans goes right into the pot and adds body and flavor. If you want a thicker chili go ahead and drain them, but I never do — that liquid is doing real work.
- Bake a pan of Jiffy cornbread while the chili finishes. Non-negotiable in this house. The chili cooks all day; the cornbread takes 20 minutes. Pull it out of the oven when your crowd walks in the door.
- Set out the toppings bar. My family goes all in on shredded cheddar and Fritos — those two are non-negotiable in this house — but sour cream, green onions, sliced jalapeños, and chopped red onion all earn their place at the table. Let everyone build their own bowl.

How long do I cook daddy’s famous crockpot chili?
Four hours on low after you brown the meat and add everything to the crockpot. You can stretch it to six on low if your day gets away from you — it only gets better the longer it sits. I do not recommend cooking it on high; the flavors don’t have time to do what they need to do, and the beans can break down. Low and slow is the move.
Do I really have to brown the meat first?
Yes. I know it’s tempting to dump everything in the crockpot raw and walk away — the whole point of a slow cooker is being lazy in the best way — but ground beef that hasn’t been seared tastes washed out in a chili this rich. Five minutes in a skillet, drain the grease, into the pot it goes. That’s the move.
What’s the secret ingredient in daddy’s famous crockpot chili?
Cinnamon. One to two tablespoons of ground cinnamon in the pot. You won’t believe how good it tastes — it gives the chili a depth and warmth that nobody can put their finger on. It is THE thing that makes people ask “what IS that?” My daddy always put it in, and now I do too. (And no, it is not chocolate — I have very strong feelings about that.)
Can I make daddy’s famous crockpot chili ahead of time?
This chili is actually BETTER on day two. The flavors marry overnight and everything gets richer and deeper. Make it a full day ahead, refrigerate, and reheat on the stovetop or back in the crockpot on low for an hour or two before serving. If I know I’m having people over on Saturday, I make this chili on Friday — every time.
Can I freeze leftover chili?
Yes, and it freezes beautifully. Let it cool completely, portion it into freezer-safe containers or zip-top bags laid flat, and freeze for up to three months. Thaw overnight in the fridge and reheat on the stovetop with a splash of water or beef broth to loosen it back up. This is one of my favorite freezer meals for busy weeks.
What’s the difference between light and dark red kidney beans?
Mostly color and a little texture. Light red kidney beans are slightly milder and a touch firmer; dark red kidneys are deeper in flavor and creamier when cooked. I use both because the visual contrast in the bowl is gorgeous and the textures complement each other. If you only have one or the other, go with it — the chili will still be incredible.
How do I double this chili for a big crowd?
Double every ingredient and use the biggest crockpot you have, or run two crockpots side by side. My 7-quart fits a single batch comfortably; doubling needs an 8-quart or two pots. If you’re feeding 20+ people, plan on two pots — the heat distributes more evenly and the beans don’t break down on the bottom. This chili scales beautifully for tailgates, church suppers, and crowd dinners.
