Monday Menu — Cubs Game, Beef Stroganoff & Thai Coconut Curry This Week!

Good morning y’all — it’s Monday, and you know what that means. Come sit with me for a few minutes while I tell you what’s on the menu this week. We had the most wonderful Easter weekend with all our friends and family, and I am still smiling about it. But now it’s Monday and this family needs to eat, so let’s talk about what’s happening at the Longstreth table this week.

Monday — No Cooking Tonight!

Tonight we are not eating at home, and honestly I am thrilled about it. Jonathan’s Buddy Baseball program does these special experiences from time to time, and this week we were invited to a Cubs vs Rays game — in a box suite. If you don’t know this about my husband yet, Jason is an Iowa boy and a lifelong, ride-or-die Cubs fan. Good times or bad, it does not matter — he is a Cubs fan always. So getting to take him and the three younger kids to see the Cubs play is just such a gift. Stadium dogs and baseball. That’s dinner tonight.

Tuesday — Corn, Black Bean & Sweet Potato Enchiladas

This one is a new freezer meal experiment and I’ll be honest — I have no idea how it’s going to go over with my family. It sounded absolutely delicious to me, so I went for it. Corn, black bean, and sweet potato enchiladas. It might be a mom dinner. We’ll see. Either way, I’m curious and I’m going for it.

Wednesday — Classic Beef Stroganoff

This is my baby girl’s absolute favorite dinner and I am so excited to share this recipe with y’all soon. Classic beef stroganoff — comfort food at its best and very budget friendly. If you need a good, cheap dinner in your back pocket that your family will actually eat, this is going to be the one for you.

Thursday — Thai Coconut Curry Chicken

This one is for my crowd, and every single time I make it they scrape the bowl. Thai coconut curry chicken with rice and naan bread. It gets you out of the weeknight dinner box a little bit without being complicated, and the flavor is just incredible. I might even triple the batch this time. That’s how good it is.
