Monday Menu of the Week — Spring Break Cooking & Eddie’s Vet Update

Happy Monday, friends! Pull up a chair because it’s time for our weekly morning chat — Monday Menu of the Week is here and I have a full week of cooking planned, a little family update, and some good news about our boy Eddie to share with you!

The girls are home for spring break this week, so I am pulling out all the stops. When my people are all under one roof, I cook. That is just what I do.

Let’s start with yesterday — Sunday lunch was a good one. I made chicken and rice, which is a family favorite around here, roasted green beans, rolls, and Cherry Cheesecake Bars for dessert. It was a full table and I loved every minute of it.

Here’s what’s on the menu for the rest of the week:

Monday — Tacos, but not just any tacos. We have discovered the magic of crispy fried corn tortillas and friends, there is no going back. It is a game changer and our family is fully converted.

Tuesday — Boursin Cheese Orzo Bake with spinach and smoked sausage. One pan, all the flavor, and it was such a big hit the first time I made it that I knew I had to make it again while the girls are home. I am also hoping to have some fresh sourdough bread to go along with it — Willynilly is getting close!

Wednesday — Sun-Dried Tomato and Feta Chicken with sweet potatoes. This is one of my freezer party meals and I cannot wait to try it. It is already prepped — I just need to thaw it and bake it. Easy Wednesday win!

Thursday — Beef and Broccoli Stir Fry with rice. This is a girls’ favorite and I want to get it in while they are all home. It is one of those meals that everybody is happy about and that is always a good thing when you are feeding a crowd.

I will be sharing recipes as the week goes by, so stay tuned!

And one more thing before I go — little Eddie had his very first vet checkup this morning and he is doing well! He has gained a little weight and is acting much more like his normal kitty self. He still has about two and a half months left of his three month treatment, so we are watching him closely and cheering him on. Thank you all so much for your kind words and good thoughts about our boy. 🐾
