The Meal I Put the Least Effort Into and Got the Most Compliments For

Crock pot pork chops are the two-ingredient dinner my family has been asking for on repeat for years, and I’m finally putting the recipe on the internet. Boneless pork chops. Two cans of cream of chicken soup. That is it. I threw it together on a busy Sunday morning before church, walked out the door, and came home to a house that smelled like I’d been cooking all day. That is the magic of the crock pot, y’all. And that is the magic of crock pot pork chops — the meal I put the least effort into and got the most compliments for.

Notes

For a family of 7 like Stephanie’s, double the recipe — 8 boneless pork chops and 2 cans of soup. Same cook time.
The soup combines with the pork drippings during cooking to create a rich, savory gravy — no extra steps needed.
One of Stephanie’s favorite seasoning additions is Kinder’s The Blend, but she has made this many times with just the two ingredients and it is absolutely delicious either way.
Instant mashed potatoes work perfectly here — Stephanie said so herself, and with all that gravy nobody will notice. Sometimes it just needs to be done. 😊

Why These Crock Pot Pork Chops Work

I want to tell you about the Sunday this particular batch of crock pot pork chops was made, because it is a very accurate picture of real life at our house.

This weekend had been busy. Really busy. The kind of busy where you get to Sunday morning and you just look at the refrigerator and think — okay, what can I make that will basically make itself? I pulled some boneless pork chops  out of the freezer, grabbed two cans of cream of chicken soup  from the pantry, and had the whole thing in the crock pot in about five minutes. Then we went to church.

We came home to a house that smelled absolutely wonderful. The soup had cooked down with all the pork drippings into this rich, savory gravy and the pork chops were so tender they were practically falling apart. I made instant mashed potatoes — yes, instant, I said what I said — because we did not have time for homemade. With all that gravy ladled right over the top, honestly? You could not tell the difference.

I also told y’all in the video that I made a box cake for dessert the day before. So between the two-ingredient pork chops and the box cake, this was maybe the lowest-effort food weekend I have had in a long time. And my family acted like I had cooked for days. That is the best feeling in the world.

Here is what I love most about crock pot pork chops — they are endlessly flexible. Cream of celery, cream of mushroom, whatever you have in the pantry. Bone-in chops work just as well as boneless. You can season it however you like or skip the seasoning entirely. It is the kind of recipe that meets you wherever you are on a given day, and it always delivers.

A Few Things That Make Crock Pot Pork Chops Even Easier

  • Skip the searing. I never sear my pork chops before they go in the crock pot. The whole point of this recipe is dump-and-go, and the cream of chicken gravy more than makes up for it. Saving those extra ten minutes is exactly why I make this on busy Sundays.
  • Any cream soup works. Cream of celery, cream of mushroom, whatever you have in the pantry — they all turn into gorgeous gravy. Mushroom gives you a deeper, earthier flavor. Celery is a nice lighter option. Mix and match if you want.
  • Instant mashed potatoes are not a sin. When the gravy is this good, nobody can tell the difference. I will fight on this hill. Save your weekday energy for the things that actually need it and let the crock pot do the heavy lifting.
  • Bone-in chops work too. The recipe is endlessly forgiving. Boneless are easiest because they cook evenly and there’s nothing to fish out, but bone-in turn out beautifully and some people swear they’re more flavorful.
  • Reheat with a splash of broth or milk. Leftovers thicken up overnight as the gravy sets. Warm them gently on the stovetop with a splash of broth or milk stirred in to loosen the gravy back up. Microwave at 50% power if you go that route so the pork doesn’t dry out.

Crock Pot Pork Chops FAQ — The Questions I Get Every Time

How long do crock pot pork chops take to cook?

I cook mine on low for 6 to 8 hours — perfect for throwing it in before church or before a long workday. If you are in more of a hurry, 3 to 4 hours on high works too, but low and slow is where the magic happens. The longer they go, the more tender they get. Use a meat thermometer  and make sure they hit an internal temperature of 145°F with a 3-minute rest — that is the USDA-recommended safe internal temperature for pork.

Can I use frozen pork chops in the crock pot?

The USDA does not recommend starting frozen meat in a slow cooker because it spends too much time in the bacterial danger zone before it comes up to temperature. Thaw your pork chops in the fridge overnight and you are golden. If I forget, I run them under cool water in the sink for about 20 minutes to thaw the outside before they go in. The Kitchn has a great breakdown on the best cut of pork chops for the slow cooker if you want to read more on which cut to grab at the store.

Can I substitute cream of mushroom or cream of celery for the cream of chicken?

Absolutely. Any condensed cream soup works beautifully in this recipe — cream of mushroom gives you a deeper, earthier gravy, and cream of celery is a nice lighter option. Mix and match if you want. This recipe is as forgiving as they come. Use whatever you have in the pantry.

Do I need to sear the pork chops first?

Nope. I never do. The whole point of this recipe is that it is a dump-and-go dinner. Searing adds flavor, sure, but the cream of chicken gravy more than makes up for it — and saving those extra ten minutes is exactly why I make this on busy Sundays. If you want to sear them for a little color, nobody’s stopping you. But it is not necessary.

What do you serve with crock pot pork chops?

Mashed potatoes are non-negotiable in this house — and like I said, instant is fine when the gravy is this good. Green beans, corn, and a dinner roll round out the plate the way my family likes it. Buttered egg noodles or rice also soak up that gravy beautifully if you want to switch it up.

Can I make crock pot pork chops ahead of time?

Yes. These reheat beautifully — the gravy keeps the pork moist even the next day. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop with a splash of milk or broth to loosen the gravy back up, or warm in the microwave at 50% power so the pork does not dry out.

Can I freeze crock pot pork chops?

You can, but I will be honest with you — the texture is better fresh. If you do freeze them, let them cool completely, portion into freezer-safe containers with plenty of the gravy, and freeze for up to 3 months. Thaw overnight in the fridge and reheat low and slow on the stovetop.
