Sourdough started as an experiment in my kitchen and turned into a weekly ritual. Most weeks, one day belongs to bread: I pull Pearl out of the fridge, feed her up, and by the next morning there are loaves cooling on the rack. Pearl is my all-purpose starter — she makes the soft white sandwich bread my whole crowd lives on. Free Willy 2 is my whole wheat starter, and he bakes just for my husband Jason, who eats a Mediterranean diet. Two starters, one kitchen, and a whole lot of bread. This is the room where all of it lives — the recipes, the starter care, the tools I actually use, and the story of how we got here.

How Our Sourdough Story Started

I did not come to sourdough as an expert — I came to it as a complete beginner who killed her first two starters. (Rest in peace, Willy and Nilly. It turned out my old kitchen scale was not actually weighing right, which is a lesson I paid for in flour.) Then a sweet friend sent me a healthy, established starter as a surprise gift, along with the sandwich bread recipe I still bake every week. I named her Pearl, and she changed everything. Here is a look at how I bake with her now:

Sourdough, the Short Version

If you are brand new: sourdough is bread leavened with a live starter — a simple mix of flour and water that captures wild yeast and good bacteria from the air and your kitchen — instead of packaged yeast. That starter is what makes sourdough rise, gives it that gentle tang, and makes it easier on a lot of stomachs than regular bread. You feed it, it grows, and a spoonful of it raises a whole loaf. That is the whole magic, and once you have a healthy starter going, the rest is just rhythm.

Why I Bake With King Arthur Flour

People ask what flour I use, and the honest answer is King Arthur, every time. Flour matters more in sourdough than almost anywhere else in baking, and here is why: bread flour has a higher protein percentage than all-purpose, and that protein is what builds gluten. More gluten means a better rise, more structure, and that classic chewy sandwich-bread crumb. King Arthur mills theirs to a consistent protein level batch after batch, so my loaves come out the same every week — and consistency is everything when you are baking on a schedule. You can absolutely make my recipes with unbleached all-purpose and still get great bread, but bread flour is what I reach for. Sourdough FAQ — The Questions I Get Most

Is sourdough hard for a beginner to make?

It is more forgiving than it looks, but it does ask for patience. The hardest part is getting a healthy starter going — after that, baking is mostly waiting. My sourdough sandwich bread recipe is the one I hand every beginner because the timeline is gentle and the dough forgives a lot of small mistakes. Start there, and start with a good kitchen scale.

How often do I have to feed my sourdough starter?

Less often than you think. If your starter lives on the counter, it wants feeding once or twice a day. But most of us keep it in the fridge, where it only needs feeding about once a week — that is exactly the feed-and-fridge routine I use to keep Pearl alive through busy weeks. You pull it out, feed it the day before you bake, and back in the fridge it goes.

What flour is best for sourdough?

For sandwich loaves I use bread flour for the higher protein and better rise — King Arthur Bread Flour is what is always in my pantry. All-purpose works in a pinch and my recipes are written to be forgiving, but if you want the best structure and chew, reach for bread flour. For whole wheat loaves I use whole wheat bread flour, which is what Free Willy 2 was built for.

Why is there liquid on top of my starter?

That is hooch, and it is just your starter telling you it is hungry. It is harmless. You can pour it off or stir it back in, then feed your starter and it will perk right back up. I wrote a whole post about the day Pearl made hooch so you do not panic the way I almost did.

Can I keep a sourdough starter alive with a busy family schedule?

Yes — I do it with a family of seven. The trick is the fridge. A cold starter slows way down and only needs a weekly feed, so it fits around real life instead of running it. I bake one day a week, and the rest of the time Pearl just waits patiently in the door of the refrigerator.

What is the one tool you would tell a new sourdough baker to buy first?

A digital kitchen scale, no contest. Sourdough is all about ratios, and measuring by weight instead of cups is the difference between a starter that thrives and one that does not. I learned that the hard way when my first two starters died on a broken scale. Get a good one, and stock the rest of your kit from The Sourdough Pantry.
