Honey garlic roasted carrots started as a Mediterranean diet side dish I made for my husband Jason, and they have ended up being one of the most-requested sides at my table. My whole family fights over them. The caramelized edges, the honey garlic glaze, the way they get just a little bit sticky and sweet in the oven — I need you to make these immediately. I love Jason fiercely, and when he committed to the Mediterranean diet I took that seriously. Not in a sad, flavorless, “here’s your plain plate of vegetables” kind of way — in a “I am going to make you the most delicious thing I can think of that fits your diet” kind of way. Method
  Start Cooking 

  1. Preheat oven to 400°F. Line a large baking sheet with foil.
  2. Place carrot sticks on the prepared baking sheet in a single layer.
  3. Mix garlic, honey, soy sauce, black pepper, and olive oil in a small bowl.
  4. Drizzle the garlic, honey, soy sauce, black pepper, olive oil mix over the carrots.
  5. Toss by hand until every carrot stick is very well coated.
  6. Bake at 400°F for 30 minutes until caramelized and tender.
  7. Serve immediately and try to get some before your family eats them all.

Honey garlic roasted carrots work because the oven does the heavy lifting. You toss the carrots with olive oil , Nature Nate's honey , minced garlic , a splash of soy sauce, and pepper, and the high heat does the rest. The honey caramelizes, the edges of the carrots crisp up, the garlic mellows into something sweet and savory all at once, and you end up with a side dish that tastes like it took way more effort than it did.

The other thing I love about this recipe is how perfectly it fits into a full oven meal. I make these alongside my Super Simple Baked Fish and baked potatoes — everything goes in the oven at 400°F, just at different times. The potatoes go in first, the carrots go in next, and the fish goes in last. By the time the fish is done, everything is ready at the same time. Minimum effort, maximum result. That is my kind of dinner.

Cooking for someone you love with dietary restrictions does not have to be punishment food. Jason is on the Mediterranean diet, and these honey garlic roasted carrots check every box — olive oil, vegetable-forward, naturally sweet, no processed sugar. But here’s the thing nobody warned me about: when you make a dish good enough for the person on the strict diet, everyone else fights over it too. Jason loves them. The kids love them. I love them.

A Few Things That Make Honey Garlic Roasted Carrots Even Easier

  • Cut the carrots into uniform sticks on a big cutting board . Even sizing means even roasting. If some are thick and some are skinny, the skinny ones burn while the thick ones are still firm. I cut my carrots into roughly 3-inch sticks, about the thickness of my pinky finger, and a board with real room makes quick work of a whole pound.
  • Use a big enough baking sheet  so the carrots don’t crowd. Crowded carrots steam instead of roasting. Give them room. If you have to use two pans, do it — this is the difference between caramelized carrots and soggy ones.
  • Don’t skimp on the honey. 3 tablespoons of Nature Nate's honey  for a pound of carrots feels like a lot when you’re pouring it on, but the honey is what creates the caramelized, sticky-sweet glaze. Trust me. Pour it on.
  • A sprinkle of Kinder's The Blend  takes them over the top. The recipe card keeps it simple with salt and pepper, but a light dusting of Kinder’s The Blend before they go in the oven layers in garlic, onion, and savory depth that pushes these carrots from good to memorable.
  • Roast at 400°F — not 375°F. The high heat is what caramelizes the honey and crisps the edges. Lower heat just steams the carrots in their own moisture. 400°F also lines up beautifully with baked fish and baked potatoes for a whole-oven dinner.

Honey Garlic Roasted Carrots FAQ — The Questions I Get Every Time

What temperature and how long do I roast honey garlic roasted carrots?

Roast honey garlic roasted carrots at 400°F for 25 to 30 minutes, tossing once halfway through. You’ll know they’re done when the edges are caramelized and a fork slides in easily. The honey will be sticky and slightly bubbly around the carrots — that’s exactly what you want. Every oven runs a little differently, so start checking around 25 minutes.

Can I make honey garlic roasted carrots ahead of time?

You can prep the carrots and the glaze ahead, but I really recommend roasting them right before serving for the best texture. Cut the carrots into sticks and store them in a zip-top bag in the fridge for up to 2 days. Mix the honey, garlic, soy sauce, olive oil, and pepper in a small jar and refrigerate up to 3 days. When dinner time comes, toss everything on the sheet pan and roast. The caramelized edges happen in the oven — they don’t reheat well.

Can I use baby carrots instead of whole carrots?

You can — with one caveat. Baby carrots have a tougher exterior because they’ve been shaped and tumbled, and they don’t caramelize quite as beautifully as fresh whole carrots cut into sticks. If baby carrots are what you have, use them and add 5 extra minutes of roasting time. But if you can grab a bag of whole carrots , cut them yourself — the texture is significantly better.

What can I substitute for soy sauce in this recipe?

Coconut aminos work beautifully if you need a soy-free or gluten-free option — they’re slightly sweeter, so you can pull back on the honey by half a tablespoon if you want. Liquid aminos or tamari are also good 1:1 swaps. The soy sauce is here for umami depth and a salty counterpoint to the honey, so any salty-savory liquid in that family does the trick.

Are honey garlic roasted carrots Mediterranean diet friendly?

Yes — that’s actually why I started making them. The base is olive oil, vegetables, garlic, and natural sweetener (honey rather than processed sugar), which lines up cleanly with Mediterranean diet principles. Soy sauce is the one ingredient that isn’t traditionally Mediterranean, but the amount is small (1 tablespoon for the whole pan) and you can swap in coconut aminos or simply leave it out and add a pinch of extra salt if you’re being strict about it.

Can I double this recipe for a crowd?

Absolutely. Double the recipe to 2 pounds of carrots and use two sheet pans — do not pile everything onto one pan or the carrots will steam instead of roast. Two pans on two oven racks works perfectly. Swap the pan positions halfway through so both pans caramelize evenly. This is how I make these when I’m feeding the whole Longstreth crew plus company.
