Monday Menu — Pot Roast, Iowa Pork Tenderloin Sandwich & Breakfast for Dinner This Week 🍽️
Happy Monday, y’all! If you have been staring at your fridge wondering what to make this week, I already did the thinking for you. This is Monday Menu of the week, and this one has some real highlights — we’ve got a classic Sunday pot roast to kick things off, an Iowa pork tenderloin sandwich that Jason grew up with, and a big breakfast-for-dinner send-off for my college kids before they head home for the summer. Pull up a chair. Here’s what is on the Longstreth table this week.

Sunday — Beef Pot Roast with Carrots and Potatoes
We started the week the right way — one pot, classic family Sunday dinner. Beef pot roast with carrots and potatoes, the kind of meal that makes the whole house smell amazing and requires almost no effort once it is in the pot. I also made an easy apple berry fruit crumble for dessert. It is such a good Sunday combination. If you want the full recipe, I have it on the blog — it is one of the most-made recipes around here.
Monday — Chicken and Steak Fajitas
Monday night I am taking it easy on myself, as I should. Chicken and steak fajitas — quick, yummy, everyone at the table is happy. Fajitas are my go-to on a Monday when I need dinner on the table fast and I do not want to think too hard. Peppers, onions, seasoned meat, warm tortillas. Done.
Tuesday — Iowa Pork Tenderloin Sandwich
This one is a nostalgic favorite for Jason — an Iowa pork tenderloin sandwich is a Midwest staple that most of the country has never heard of. It is a pork cutlet, pounded thin and deep fried, served on a bun. The cutlet is usually much bigger than the bun, which is part of the charm — it is crispy, satisfying, and absolutely delicious. Jason grew up eating these and I love being able to put that on the table for him.
Thursday — Pancakes, Tater Tot Casserole, Fresh Fruit & Scrambled Eggs
Thursday is a big one this week. My college kids are heading home for the summer after this meal, so I am making their favorites — breakfast for dinner. Pancakes, tater tot casserole, fresh fruit, and scrambled eggs. This is the meal they requested, and I love that. Cooking someone their favorite meal before a long goodbye is one of my favorite things I get to do as a mom.
Friday — Lemon Garlic Chicken Pasta
Closing out the week with something a little lighter. Lemon garlic chicken pasta — it is bright, it is fresh, and it just fits the warmer weather we are getting into. A more refreshing pasta for a Friday night when the week is winding down. Simple ingredients, easy prep, and it feels like a treat.
