Tater Tot Casserole — What’s Not To Love?

This quick and easy tater tot casserole has become the crowd favorite in this house, and I mean that literally. My college kids request it constantly. I make two pans every single time and there is never anything left. Not a tater tot. Not a crumb. Nothing.

Method
  Start Cooking 

  1. Preheat oven to 350°F.
  2. Brown sausage in a skillet.
  3. Season with minced onion, garlic powder, salt and pepper.
  4. In a 9×13 pan combine cooked sausage, cream of chicken soup, sour cream, and cheddar cheese.
  5. Mix well.
  6. Layer tater tots evenly on top.
  7. Bake uncovered at 350°F for 45-55 minutes until bubbly and golden on top.

Why This Tater Tot Casserole Works

We make this most often when we have our Thursday night crowd over, and it never fails. It is budget friendly, incredibly easy to put together, and it feeds a crowd on just one pound of meat. That is exactly my kind of recipe. The whole thing is a sausage-and-soup base mixed right in the pan, blanketed with Ore-Ida tater tots, and baked until everything is bubbly and golden on top. No fancy steps. No special equipment beyond a good nonstick skillet  for browning the sausage and a 9×13 pan to bake it in.

I usually serve this with pancakes, fresh fruit, and scrambled eggs for a full breakfast spread that keeps everyone happy and full. The pancakes are cheap, the eggs up the protein, and the casserole is the savory, filling centerpiece that everybody goes back for seconds on. It is the perfect crowd meal.

One of the things I love most about this recipe is how versatile it is. If you want to turn it into a dinner meal, just swap the breakfast sausage for ground beef. Same everything else — same easy method, same delicious result. Just like that you have a whole different dish on the table. This makes 8 to 10 servings depending on what you serve alongside it, and it is one of the most budget friendly ways I know to feed a crowd. Savory, filling, cheesy, crispy on top — what is not to love?

A Few Things That Make Tater Tot Casserole Even Easier

  • Brown the sausage well — do not rush it. Get real color on it in a good nonstick skillet  before it goes in the pan. Pale sausage makes a pale casserole. Browned sausage gives the whole bake that savory, caramelized flavor that makes people ask what is in it.
  • Layer the tater tots in a single layer, edges touching. Two layers of tots and the bottom layer stays soggy. One snug layer gives you that crispy golden top and a creamy base underneath. Twenty ounces of tots covers a 9×13 perfectly.
  • Make it ahead — it actually gets better. Assemble the whole casserole the night before, cover, refrigerate, and bake straight from the fridge the next morning. Add about 10 minutes to the bake time and you have a brunch-ready casserole with zero work the day of.
  • Swap to ground beef for a dinner version. Same recipe, same method, completely different dish. Ground beef plus cream of mushroom soup instead of cream of chicken is my favorite dinner variation — feels like a totally different meal.
  • Double it in disposable foil pans  when you are feeding extra people. One for the table, one to send home with whoever needs it. The whole recipe doubles cleanly and disposable pans mean no dishes to wash and no pan to get back.

Tater Tot Casserole FAQ — The Questions I Get Every Time

What temperature and how long do I bake tater tot casserole?

Bake uncovered at 350°F for 45 to 55 minutes, until the tots are golden and crispy on top and the casserole is bubbling at the edges. Total time from oven-on to plates is about an hour and five minutes including 10 minutes of prep. If your tots are still pale at 45 minutes, give it another 5 to 10 minutes — undercooked tots stay soggy in the middle.

Can I make tater tot casserole ahead of time?

Yes, and this is one of my favorite make-ahead meals for a crowd. Assemble the entire casserole in your pan, cover tightly, and refrigerate up to 24 hours. When you are ready to bake, pull it out, uncover, and bake straight from the fridge — just add about 10 minutes to the bake time to account for the cold start. It is the easiest brunch-ready casserole for company.

Can I freeze tater tot casserole?

Absolutely. You can freeze it unbaked or baked. To freeze unbaked, assemble the casserole in a disposable foil pan , cover with the foil lid plus a layer of plastic wrap, and freeze up to 3 months. Thaw overnight in the fridge before baking, then bake as directed adding 10 to 15 extra minutes. To freeze leftovers after baking, portion into containers and freeze up to 2 months — reheat in the oven at 350°F until heated through.

Can I use ground beef instead of breakfast sausage?

You sure can — that is my go-to dinner version. Brown a pound of ground beef the same way you would brown the sausage, season with salt, pepper, garlic powder, and minced onion (same seasonings as the breakfast version), and proceed with the recipe exactly as written. I usually swap in cream of mushroom soup instead of cream of chicken when I am making the beef version, but either works beautifully.

What sides go with tater tot casserole?

For the breakfast version, I serve it with pancakes, fresh fruit, and scrambled eggs for a full crowd-friendly brunch spread. For the dinner version (with ground beef), green beans, corn, or a simple green salad with Italian dressing rounds it out. Anything fresh and crisp balances out the rich, creamy, cheesy casserole.

How many people does this tater tot casserole feed?

One 9×13 pan serves about 8 to 10 people depending on what you serve alongside it and how hungry your crowd is. When my college kids are here for Thursday night, I make two pans every time — and there is never anything left. Two pans comfortably feeds a group of 12 to 18, especially with pancakes and eggs on the side.

Why are my tater tots soggy on top?

Two reasons usually. First, the casserole filling underneath is too wet — drain the sausage well after browning and do not use extra sour cream. Second, you doubled up the tater tot layer instead of doing a single snug layer. Tots need air circulation to crisp. If yours are still soggy at the end, run the casserole under the broiler for 2 to 3 minutes (watch closely!) and that will crisp them right up.
