Monday Menu — Toast With the Most, Tuna Noodle Casserole & Boursin Orzo This Week! 🍞

Good morning y’all — happy Monday! Don’t know what to make this week? I’ve got you covered. This is Monday Menu of the week, and I am so excited about what’s on the table for my family of seven this week. It is a fun one — we’ve got a choose-your-own-adventure toast night, a classic the kids actually requested, and two crowd favorites that always get scraped clean.

Monday — Toast With the Most!

Tonight I’m doing something a little different and honestly I cannot wait. We’ve been on a sourdough kick around here, so tonight we are doing Toast With the Most — sourdough toast night where everyone tops their own. I’m setting out bacon and fried eggs, Nutella and bananas, peanut butter, raspberries, tuna salad, avocado, cheese, cinnamon sugar — basically anything I can think of. Everyone gets to build their perfect toast and it is the easiest dinner I make all week. The whole family loves it and there is zero complaining. This might be my favorite Monday in a while.

Tuesday — Tuna Noodle Casserole

I know, I know — but hear me out. My kids actually requested this one. My son came to me and said “you have not made that in forever, can you please make it?” and honestly that is the best thing a mama can hear. Tuna noodle casserole is coming back to the Longstreth table tomorrow night and I am here for it.

Wednesday — Yellow Rice & Black Beans with Smoked Sausage

This one is a family favorite and one of the most thrifty dinners I make. Yellow rice and black beans with smoked sausage and peppers — I usually serve it with some crusty bread and it is filling, flavorful, and the kids go back for seconds every single time. If you are looking for a budget-friendly weeknight dinner that actually gets eaten, this is a really good one.

Thursday — Boursin Orzo Bake & Creamy Beefy Shells (For the Crowd!)

Thursday is crowd night, and I am pulling out two favorites this week because my college girls specifically asked for the Boursin Orzo Bake with Sausage and Spinach. We are obsessed with this one — I’ve already made it twice and we cannot stop. Orzo, spinach, Boursin cheese — it is so creamy and so good. And alongside it I’m making Creamy Beefy Shells, another crowd staple that disappears every time. Two pastas for the crowd this week. No complaints expected.
