- Preheat oven to 350°F. Grease your loaf pan(s).
- In a large mixing bowl, cream together the butter, sugar, eggs, and bananas using a hand mixer or stand mixer until well blended.
- Add the flour, baking powder, and salt. Mix until the dry ingredients are fully incorporated.
- Slowly pour in the milk and mix on low until just combined.
- Pour batter into pan(s), filling each about one-third to one-half full.
- Bake at 350°F for 1 hour for a full-size or half-size loaf, or 45–60 minutes for mini loaves. Test with a toothpick — if it comes out clean, they’re done.

My mama’s banana bread has never failed me. Not once. And I’ve made it more times than I can count — for my kids, for neighbors, for anyone who needs a warm loaf dropped off at their door. The reason it works is simple: it’s a pure, unfussy recipe. No sour cream, no brown butter, no extra steps. Just good ingredients creamed together until smooth, dry ingredients folded in, and milk to bring it all together.
The bananas get creamed right in with the salted butter , sugar , and eggs — not mashed separately. That’s the move. It makes the batter incredibly smooth and gives the bread a tender, even crumb all the way through. You’ll notice there’s no baking soda in this recipe. Mama uses baking powder only, and the result is a bread that rises beautifully without any bitterness.

One more thing: this recipe scales like a dream. Make one full loaf for your family, or double it (like I do) and fill four half-size foil pans to give away. People will love you for it.
A Few Things That Make Mama’s Banana Bread Even Easier
- Let the bananas get really, really ripe. Speckled isn’t enough — you want deep brown-and-black. That’s when the natural sugars are most developed and the flavor goes from “fine” to “incredible.” If your bananas aren’t there yet, the FAQ below has the oven trick to ripen them in 20 minutes.
- Cream the bananas right in with the butter and sugar. Most banana bread recipes have you mash the bananas separately and fold them in. Mama doesn’t. Adding them to the stand mixer (or with a hand mixer) along with the butter, sugar, and eggs gets you a smooth, even batter and a tender crumb. It’s the single biggest reason this bread is different from every other banana bread.
- Use a real measuring cup for the flour. Baking is chemistry. A scoop-and-dump with a coffee mug will pack the flour and you’ll end up with a dense, dry loaf. Spoon the flour into your measuring cup and level it off with a knife. Or weigh it if you have a scale — 240 grams per cup of King Arthur AP flour.
- Don’t overfill the pans. One-third to one-half full is the sweet spot. Banana bread rises a lot, and overfilled pans give you a flat-topped loaf that spills over and burns at the edges. Better to make one extra mini loaf than to overfill.
- Double the batch. I almost never make a single batch of this anymore. Double it, fill four foil loaf pans , keep one for your family, and give the other three to people in your life who need a little something on their doorstep. Banana bread + a handwritten note = doorstep magic.
- Want an even more tender crumb? Banana bread already bakes up soft, but you can make it extra tender by swapping in homemade cake flour — my great-grandma’s 100-year-old cake flour trick trades a little of the flour for cornstarch.

The riper the better! You want bananas that are deeply speckled or even mostly brown-black on the outside. The more ripe they are, the sweeter and more flavorful your banana bread will be. If your bananas aren’t quite there yet, you can speed things up by placing unpeeled bananas on a baking sheet at 300°F for about 15–20 minutes until the skins turn black. Let them cool before using.

Just cream the butter, sugar, eggs, and bananas until they’re well blended before adding the dry ingredients. I only use my KitchenAid stand mixer when I make smaller batches that my mixer can handle. But either way, your hand mixer will work just fine.
How do I store banana bread and how long does it last?
Wrap your banana bread tightly in plastic wrap or store it in an airtight container at room temperature — it’ll stay moist for 3–4 days. For longer storage, wrap it well and freeze it for up to 3 months. I love slicing it before freezing so I can pull out a slice at a time. A quick 20–30 seconds in the microwave and it tastes like it just came out of the oven.
