Start CookingIngredients
- 1 package (20 oz) cheese tortellini refrigerated
- 8 oz baby bella mushrooms sliced
- 3 tablespoons salted butter
- 1 tablespoon extra virgin olive oil
- ½ – 1 tsp minced garlic or 1-2 cloves, minced
- 1 tsp dried sage or 1 tablespoon fresh sage
- ½ cup finely shredded Parmesan cheese
- Salt to taste

Method Start Cooking
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add sage and cook for about 1 minute until it crisps up (if using fresh). Remove sage and set aside.
- Add garlic and mushrooms to the pan along with the remaining 2 tablespoons of butter. Sauté for about 5 minutes, stirring occasionally, until mushrooms are browned.
- Meanwhile, cook the tortellini according to package directions. Drain.
- Add drained tortellini to the skillet. Sprinkle in Parmesan and add sage back in. Toss until everything is well coated.
- Season with salt and pepper to taste. Serve immediately.

- Use pre-sliced mushrooms. A package of pre-sliced baby bella mushrooms is your friend on a Tuesday night. Slicing a whole 8 oz package of mushrooms takes five minutes and one cutting board you don’t want to wash. Pre-sliced costs maybe a dollar more and gets you to dinner faster.
- Don’t crowd the mushrooms in the pan. Mushrooms release a LOT of water. Spread them out in a single layer and let them sit undisturbed for two or three minutes before stirring. Crowded mushrooms steam instead of sear, and you lose the golden-brown caramelization that makes this sauce taste rich.
- Salt the pasta water like the sea. A tablespoon of salt in the boiling water is what seasons the tortellini from the inside. Unsalted pasta water means bland pasta no matter how good your sauce is. Don’t skip this.
- Reserve a splash of pasta water before you drain. Old Italian-restaurant trick. A quarter cup of starchy pasta water tossed in at the end emulsifies the butter and Parmesan into a glossy sauce that coats every piece. If your sauce looks dry, splash some in.
- Toss the tortellini in the pan, not in a serving bowl. Refrigerated tortellini is fragile when cooked. The minute you drain it, get it into the hot pan with the mushroom butter sauce so the heat keeps moving and the pasta soaks up the flavor. Yes — cremini mushrooms and baby bella mushrooms are exactly the same thing. They’re just marketed under different names. Both are the same species as portobello mushrooms, just harvested younger. Can I use dried sage instead of fresh?
Yes — I did exactly that in the video and it was great. Use 1 teaspoon of dried ground sage in place of 1 tablespoon of fresh. You won’t get the crispy texture, but the flavor is still warm and herby. Add it with the mushrooms rather than crisping it separately.
Can I add protein to this cheese tortellini with mushroom butter sauce?
Definitely. Italian sausage is the most natural addition — brown it first, remove it from the pan, then build the mushroom butter sauce in the same pan and add the sausage back in at the end. Grilled chicken works too. The sauce is rich enough to carry whatever you add.

It’s best fresh — the tortellini absorbs the sauce quickly as it sits.
