Freezer Meal Party — 3 Meals Prepped and Ready for My Crowd

Have you ever heard of a freezer meal party? Because I hadn’t — not
really — and then my friend Melissa invited me to one and I came home
with three incredible meals already prepped, packaged, and ready to
cook for my family. I may never recover.

Here’s how it works. Melissa sets everything up in advance — she
chooses six recipes, sources all the ingredients, and has the
containers ready to go. You show up, pick the meals you want to make,
and prep them together as a group. By the time you leave, you’ve got
homemade freezer meals ready for your family with barely any effort on
your part. It is genuinely one of the smartest things I have ever
participated in.

I chose three meals — and I have to tell you, every single one of them
was a deliberate choice.

My first pick was the Sun-Dried Tomato and Feta Chicken. Jason is on a
Mediterranean diet right now
, and this one is one hundred percent
Mediterranean diet friendly. I spotted it on the menu and it went
straight into my bag. We are eating it on Wednesday and I cannot wait
to tell you how it turns out.

My second pick was the Sweet Potato, Corn and Black Bean Enchiladas.
This one was purely for me — it just sounded so good that I could not
pass it up. Sweet potato. Corn. Black beans. Wrapped up and ready to
go. Yes please.

My third pick was a Pork Fusion that honestly might be my most
versatile meal of the three. It’s got pork in a sweet and savory sauce
made with apricot preserves, soy sauce, and rice vinegar — and you can
serve it in a lettuce wrap, a regular wrap, or just over rice. That
kind of flexibility is everything when you’re feeding a crowd and
trying to make everyone happy.

Three meals. Ready to go. Sitting in my freezer waiting for the week
to get busy — and it always does.

If you have never tried a freezer meal party, I highly recommend
looking into it. It’s a fantastic way to batch cook with friends, try
new recipes you might not have made on your own, and walk away with
meals your family will actually love. This is exactly the kind of
thing that makes feeding a crowd a little less overwhelming — and a
lot more fun.
