Quick & Easy Tater Tot Casserole

A budget friendly, crowd pleasing breakfast casserole that feeds 8-10 people with just one pound of meat. A Thursday night favorite with the college kids — make two pans because there will never be any left!

Ingredients
  

  • 1 lb breakfast sausage
  • - 1 can cream of chicken soup
  • - 1/2 cup sour cream
  • - 2 cups shredded cheddar cheese
  • - 2 lb bag frozen tater tots
  • - Minced onion to taste
  • - Garlic powder to taste
  • - Salt and pepper to taste

Equipment

  • skillet
  • 9x13 Pan

Method
 

  1. Preheat oven to 350°F.
  2. Brown sausage in a skillet. Season with minced onion, garlic
  3. powder, salt and pepper.
  4. In a 9x13 pan combine cooked sausage, cream of chicken soup,
  5. sour cream, and cheddar cheese. Mix well.
  6. Layer tater tots evenly on top.
  7. Bake uncovered at 350°F for 45-55 minutes until bubbly and
  8. golden on top.

Notes: Swap breakfast sausage for ground beef to convert this into a dinner meal! Serve with pancakes, fresh fruit, and scrambled eggs for a full crowd friendly breakfast spread.
