Method
  Start Cooking 

  1. Preheat the oven to 375°F. Line a sheet pan with foil.
  2. In a large bowl, combine the sausage, shredded cheddar, Bisquick, and milk. Mix with your hands until everything is evenly incorporated — this is the best way to get the cheese, sausage, and Bisquick fully blended.
  3. Roll the mixture into 1-inch balls and place them a couple inches apart on the prepared sheet pan.
  4. Bake for 15–18 minutes, until golden brown and cooked through.
  5. Serve warm, room temperature, or kept warm in a slow cooker on the warm setting for a party.

Freeze: Freeze rolled balls in a single layer, then transfer to a freezer bag. Bake from frozen at 375°F for 22–25 minutes.

These sausage cheese balls work because every single ingredient is doing real work. The breakfast sausage is the savory backbone. The shredded sharp cheddar gives you that distinct cheesy bite that mild gets lost in. The Bisquick  holds it all together with that perfect bready crumb. And the two tablespoons of milk — do not skip them — are what keep these from drying out.

The whole thing comes together in one mixing bowl  with your hands. I have always done it this way. You could try an electric mixer, but in my opinion, getting the Jimmy Dean breakfast sausage , cheese, and Bisquick all blended together really evenly only happens when you get in there and squish it together yourself. Wash your hands real good, and get to it. Roll the mixture into one-inch balls, place them a couple inches apart on a foil-lined sheet pan, and bake at 375°F for 15 to 18 minutes until golden and cooked through. They are warm, they are savory, and they go from oven to platter to empty plate in about ten minutes.

Let me tell you the story behind the batch in the video. My son’s school was doing a teacher appreciation week, and they asked us parents to bring in breakfast items. I wanted something warm. Something savory. Something that wasn’t another donut box. So I doubled the recipe, mixed it all up at my dining table because my kitchen was set up to film something else, threw the rolled balls in the fridge overnight, and baked them off in the morning before school. The teachers loved them. That’s the beauty of this recipe — prep ahead, refrigerate, bake fresh. They understood the assignment.

If you want to take a peek at Food Network Kitchen’s slightly fancier version, they add thinly sliced scallions for a little color and onion flavor. Same basic formula, just dressed up. I keep mine to the four-ingredient classic because that is what my crowd loves and that is what disappears.

A Few Things That Make Sausage Cheese Balls Even Easier

  • Mix with your hands. I know, I know. But hear me out. Sausage cheese ball dough is thick, the cheese needs to be evenly distributed through every single bite, and an electric mixer just does not get in there the way your hands can. Wash up, dive in, and you’ll have evenly mixed dough in about 90 seconds. It’s not glamorous but it works.
  • Use sharp cheddar, not mild. Mild cheddar disappears in the sausage. You want sharp — it stands up to the meat and gives you that distinct cheesy bite in every ball. I use shredded sharp cheddar . If you have a block, even better. Pre-shredded works fine in a pinch.
  • Prep them the night before. Mix the dough, roll the balls, arrange them on the sheet pan, cover with foil, refrigerate. In the morning, pop them straight in the oven. Same bake time, perfect texture, zero stress. This is exactly what I did for the teacher appreciation batch in the video.
  • Line the pan with foil. The cheese melts out and crisps up on the bottom of the pan, which is delicious but also a nightmare to clean. Foil saves the pan and lets you slide the whole batch off in one move. Worth the ten seconds.
  • One-inch balls is the sweet spot. Bigger and they take too long to cook through; smaller and they dry out. One inch — about a heaping tablespoon of dough — is the size that gives you a tender inside and a golden outside in 15 to 18 minutes. Resist the urge to make them bigger.

Bisquick is what makes this recipe so easy and so reliable. You can substitute another biscuit baking mix one-for-one if Bisquick is not available, but I would not try to make this from scratch flour and leavening — it changes the texture in ways that are hard to dial in. Stick with the boxed mix.

How do I keep sausage cheese balls warm for a party?

A slow cooker on the warm setting is the easiest way — transfer baked sausage cheese balls to the slow cooker and they will hold their warmth and texture beautifully for several hours. A chafing dish works too if you have one. Or bake them right before guests arrive, transfer to a serving dish, and let them go room temperature — they are still really good cooled down, just less wow.

Can I double the sausage cheese balls recipe for a big crowd?
