Ingredients
- 1 lb breakfast sausage I really like spicy
- 8 oz sharp cheddar cheese shredded
- 2 cups Bisquick
- 2 Tbsp milk

Method Start Cooking
- Preheat the oven to 375°F. Line a sheet pan with foil.
- In a large bowl, combine the sausage, shredded cheddar, Bisquick, and milk. Mix with your hands until everything is evenly incorporated — this is the best way to get the cheese, sausage, and Bisquick fully blended.
- Roll the mixture into 1-inch balls and place them a couple inches apart on the prepared sheet pan.
- Bake for 15–18 minutes, until golden brown and cooked through.
- Serve warm, room temperature, or kept warm in a slow cooker on the warm setting for a party.

Make ahead: Roll the balls and refrigerate overnight on the sheet pan. Bake fresh in the morning straight from cold.
Freeze: Freeze rolled balls in a single layer, then transfer to a freezer bag. Bake from frozen at 375°F for 22–25 minutes.
Doubling: For a teacher appreciation week or large party crowd, double the recipe to 2 lb sausage, 16 oz cheddar, 4 cups Bisquick, 4 Tbsp milk. You'll need two sheet pans.
Sausage choice: Spicy is my favorite, original is the safe choice for kids, mild works for picky eaters.
