Mexican Chicken Roll-Ups came straight out of my family cookbook — a recipe from my great-aunt Helen Hanavan — and the first time I made them for a party, they were gone in minutes. That was all I needed to know. I have been making them ever since, and now they are a staple at every Mexican food night in our house. My kids don’t always love Mexican food, but they will absolutely eat these. Every. Single. Time.

Method
  Start Cooking 

  1. Preheat oven to 375°F.
  2. In a large bowl, mix together chicken, cream cheese, green chilies, cheddar cheese, onion, and garlic powder until well combined.
  3. Unroll crescent rolls. Place 2–3 Tbsp of chicken mixture onto the wide end of each crescent roll.
  4. Fold up the two corner sides of the wide end, then wrap the pointed end around the filling. Place on a baking sheet.
  5. Bake for 13–15 minutes until golden brown.
  6. Serve with salsa and sour cream.

Why Mexican Chicken Roll-Ups Work

The story behind this recipe is one of my favorites. It came from my great-aunt Helen Hanavan’s family cookbook — the kind of handwritten, passed-down collection you cannot put a price on. I pulled it out when I needed something hand-held for a party and it fit the bill perfectly. The filling comes together in one bowl, the crescent rolls  do all the heavy lifting on presentation, and the whole thing bakes up golden and gorgeous in about 15 minutes.

A rotisserie chicken makes these incredibly easy. Use half for this recipe and save the other half for something else — Poppy Seed Chicken, chicken noodle soup, or just chicken tacos the next night. According to Food Network, rotisserie chicken is one of the most versatile shortcuts in the kitchen — and this recipe is proof. These roll-ups are actually one of the three dinners I get from a single batch in my cook chicken once Tuesday tip — I chop about two cups of cooked chicken right into the filling.

A Few Things That Make Mexican Chicken Roll-Ups Even Easier

  • Soften your cream cheese  all the way. Cold cream cheese is impossible to blend evenly with shredded chicken. Pull it out of the fridge an hour before you mix, or microwave on 50 percent power for 20 seconds at a time until it’s soft.
  • Use the fold-up-the-sides-then-wrap method. I have tried rolling these every which way over the years. Not the prettiest method, but it holds everything in and gives you a nice little pouch with good coverage on top so the filling doesn’t leak out the sides.
  • Bake on a pizza stone if you have one. A pizza stone  gives you a perfectly crisp bottom every single time. If you don’t have one, a regular sheet pan  works — just preheat it in the oven for a few minutes before placing the roll-ups on top.
  • Mix in one big bowl, scoop with a spoon. The filling comes together in one big red mixing bowl  and you scoop about 2 to 3 tablespoons onto the wide end of each crescent. No piping bag needed for this one — the chunky chicken filling won’t go through a tip anyway.
  • Assemble ahead, bake right before serving. Roll them up, place on a parchment-lined sheet, cover with plastic wrap, refrigerate up to 24 hours. Pop them in the oven right when your guests arrive so they come out hot and golden. The crescent dough actually handles easier when it’s been resting cold.

Mexican Chicken Roll-Ups FAQ — The Questions I Get Every Time

Can I use canned chicken instead of rotisserie?

You can, but I really wouldn’t unless you’re in a pinch. Canned chicken has a watery texture that loosens up the cream cheese filling and makes the roll-ups soggy. Rotisserie or leftover roasted chicken gives you better flavor and a filling that actually holds together inside the crescent roll.

How spicy are these with the green chilies?

Not very. Mild diced green chilies bring flavor more than heat — even my pickiest kid eats these. If you want to bump up the heat, swap in hot diced green chilies or add a few dashes of hot sauce to the filling. If you want to dial it back, cut the chilies down to 2 oz and add an extra tablespoon of shredded cheddar .

Can I make these ahead for a party?

Yes — and this is honestly my favorite way to make them. Assemble the roll-ups, place them on a parchment-lined baking sheet, cover with plastic wrap, and refrigerate up to 24 hours. Pop them in the oven right when your guests arrive so they come out hot and golden. The crescent dough actually rolls easier when it’s been resting cold.

What if my filling spills out of the crescent rolls?

It happens to me too. The fold-up-the-sides-then-wrap method I use keeps most of it in, but a little leak is part of the charm — the cheese crisps up around the bottom and that’s the part everyone fights over. Make sure your cream cheese is fully soft so the filling is thick enough to stay put while you’re rolling.

Can I freeze Mexican Chicken Roll-Ups?

You can freeze them unbaked — assemble, flash-freeze on a sheet pan until solid, then transfer to a freezer bag for up to 2 months. Bake straight from frozen at 375°F for 18 to 22 minutes. I do not recommend freezing them already baked — the crescent dough loses its flake.

How many does one batch of Mexican Chicken Roll-Ups feed?

Two packages of crescent rolls give you 16 roll-ups, which I’d plan as appetizers for 8 people (2 per person) or dinner for 4 to 5 with a side of rice and beans. For a bigger crowd, the recipe scales easily — just double or triple the filling.

What do I serve with Mexican Chicken Roll-Ups?

For a full Mexican food night, I do these as the main with chips and salsa, refried beans, Mexican rice, and a simple salad. For a party tray, I just put them on a platter with bowls of salsa, sour cream, and guacamole and let people grab and dip.
