Monday Menu — Five Dinners for a Crazy Busy Week 🍽️

Monday Menu is here, and this week is a wild one — it’s the last week of school, my kids are in exams, we’ve got activities coming from every direction, and I am not about to let dinner be the thing that breaks me. So I planned ahead, kept it simple, and I’ve got five dinners lined up that are going to get food on the table without making me lose my mind. If any of these sound good to you, come right along and make them with me.

Sunday: No-Peek Chicken and Rice + World’s Best Green Beans + Lemon Bars

I started the week off right on Sunday with my four-ingredient no-peek chicken and rice — a total dump-and-bake situation where you put everything in the pan, slide it in the oven, and walk away. It comes out so flavorful and satisfying, and it could not be easier. I paired it with my world’s best green beans — they’ve got brown sugar and soy sauce and they are a little weird and completely addictive — plus homemade sourdough rolls and lemon bars for dessert. That was a good Sunday.

Monday: One-Pot Spicy Thai Noodles

Tonight is one-pot spicy Thai noodles, and this one is a family favorite. It’s got bok choy, carrots, onion, and bell peppers, but the kids don’t even notice because the broth is so good — coconut milk and red Thai curry paste all cooked together with the noodles right in the pot. Quick, easy, one pot. I usually throw some toasted naan on the side and call it dinner. If you haven’t tried this one yet, it needs to be on your list.

Tuesday: Breakfast for Dinner — French Toast Casserole + Loaded Hash Brown Balls

Tuesday is breakfast for dinner, which my family always loves. I’m doing two make-ahead dishes — a French toast casserole and loaded hash brown balls — so I can get everything prepped ahead of time, throw it all in the oven when we’re ready, add some fresh fruit on the side, and dinner is done. This is exactly the kind of shortcut I need on a busy week night.

Wednesday: Baked Fish with Rosemary Garlic Smashed Potatoes

Wednesday I’m making baked fish paired with rosemary garlic smashed potatoes — not mashed, smashed. I got tired of making potatoes the same way over and over, came across this technique, and I am genuinely excited about it. You boil them, smash them flat, hit them with olive oil and rosemary and garlic, and roast them until they’re golden and crispy on the outside. I’ve made it a few times now and my family loves it. Can’t wait to share the full recipe.

Thursday/Friday: Fish Tacos + Chicken Tacos with Homemade Lime Crema

To close out the week, I’m using up extra fish for taco night — fish tacos and chicken tacos both on the table. And the thing I’m most excited about: a homemade lime crema. A friend shared her recipe with me and I’m finally making it from scratch. Taco night just got a serious upgrade, and I cannot wait for everyone to try it.

Monday Menu FAQ — Your Meal Planning Questions Answered

What is a Monday Menu and how does it help with dinner planning?

My Monday Menu is the dinner lineup I share every week so you can steal ideas or follow right along with me. Having a plan in place before the week starts means I’m not standing in the kitchen at 5 PM with no idea what to make. It doesn’t have to be fancy — it just has to exist. A simple plan is everything on a crazy-busy week.

What makes no-peek chicken and rice so easy?

No-peek chicken and rice is a dump-and-bake recipe — you layer the ingredients in a pan, cover it tightly with foil, and bake without ever lifting the lid. The steam does all the work and the result is tender, flavorful chicken with perfectly cooked rice underneath. It’s the kind of recipe that feels like you put in way more effort than you actually did.

What are smashed potatoes and how are they different from mashed?

Smashed potatoes are a totally different texture than mashed — you boil small potatoes until tender, then literally smash them flat on a baking sheet, drizzle with oil and seasonings, and roast them until the edges get golden and crispy. The inside stays fluffy while the outside gets a little crunchy. It’s a great change of pace when you want something more interesting than the usual.

Can I make French toast casserole and hash brown balls ahead of time?

Yes — that’s exactly the point! Both dishes can be prepped in advance, covered, and refrigerated until you’re ready to bake. On a busy weeknight, being able to pull something out of the fridge and put it straight in the oven is a game changer. Fresh fruit on the side and you have a complete dinner in almost no time at all.

What is lime crema and what do you put it on?

Lime crema is a creamy, tangy sauce made with sour cream or Mexican crema, fresh lime juice, and a little seasoning — it’s bright and rich at the same time and it makes tacos so much better. You can drizzle it over fish tacos, chicken tacos, or honestly anything that needs a little something extra. I’m making it from scratch for the first time this week and I’m already planning to put it on everything.
