Monday Menu — Biscuits and Gravy, Taco Tuesday & Taco Pizza This Week 🍽️
Monday Menu is my secret weapon against the 5 PM panic — and this week, I’ve already got dinner handled for every night. My girls are home, Jon showed up in the kitchen this morning for his Monday hugs, and we’ve got some real crowd favorites on the lineup this week. Comfort food, taco night, and Jason’s all-time nostalgic pizza — it’s a good week at the Longstreth house.

This is exactly why I do the Monday Menu every single week. When Monday morning starts with this guy leaning on me for a hug, I need dinner to already be figured out so I can just be present. Having the plan in place means I walk into the week with one less thing to stress about — and honestly, it makes the whole week smoother.
Sunday — Stuffed Spinach & Cheese Shells with Roasted Veggies
Sunday lunch was stuffed spinach and cheese shells, and I roasted carrots and green beans on the side instead of making a salad. You guys — every single veggie was gone. The kids ate all of it. I’m counting that as a major win and definitely doing it again.
Monday — Biscuits and Sausage Gravy
Tonight is biscuits and gravy — sausage gravy, specifically — and I’m making Mama’s biscuit recipe because my kids genuinely love it. This is comfort food at its finest. Quick, filling, easy, and yes — not the healthiest thing on the planet, but sometimes that’s totally okay. If you want to simplify, frozen can biscuits work great too. No shame in that at all.
Tuesday — Taco Tuesday
It’s a busy week and I don’t have time to overthink Tuesday. Taco Tuesday it is — and I’m frying the shells, which is just better, I’m sorry. I do both ground beef and chicken so there’s a healthier option for whoever wants it. Crowd-feeding gold.
Thursday — Mediterranean-Friendly Turkey Meatloaf
Thursday is Jason’s favorite meal, adapted to fit the Mediterranean diet he’s been following. Classic beef meatloaf is only supposed to be once a month on Mediterranean, so I found a turkey meatloaf recipe I really love — ground turkey with oats instead of breadcrumbs. Served with mashed potatoes and corn. It’s a full, all-American plate that also happens to be diet-friendly. He loves it every time.
Friday — Homemade Pizza Night + Jason’s Taco Pizza
Friday is homemade pizza night, which is a family favorite. Everyone makes their own kind, which keeps the crowd happy. Jason’s nostalgic pick is a taco pizza — and I make his on a whole wheat crust. It is so good. If you’re not ready to make your own dough, just grab a ready-made crust from the store and make it happen.

Honestly, I keep it simple. I pick meals the family already loves, I don’t overthink it, and I make sure there’s at least one quick meal on the list for the craziest night of the week. The Monday Menu is just a skeleton — life fills in the rest.
What is the Mediterranean diet and why is turkey meatloaf a good fit?
The Mediterranean diet focuses on lean proteins, healthy fats, whole grains, and minimal red meat. Turkey meatloaf with oats instead of breadcrumbs checks a lot of those boxes — it’s lean, satisfying, and tastes enough like the real thing that even non-dieters clean their plates.
Can I use store-bought biscuits instead of homemade?
Absolutely — frozen can biscuits are a totally valid shortcut and they work great with sausage gravy. I love Mama’s biscuit recipe, but on a busy Monday night, a can of biscuits gets dinner on the table just as fast. Use what works for your week.
How do you handle different tastes when cooking for a crowd?
I build variety right into the plan — like doing both ground beef and chicken for taco night, or making different pizza toppings for pizza night. When everyone gets to customize a little, there are way fewer complaints and a lot more clean plates. It’s crowd-feeding strategy, not chaos.
