This is real life, y’all. I said “a salad on the side of a salad” and immediately had to correct myself — I meant a potato, not a salad. Anyway. The meals are good even if my words are not always. Here’s what we’re eating this week.

Roasted Red Pepper Pasta + Cherry Dump Cake

We’re starting with roasted red pepper pasta, and I’m pairing it with the easiest three-ingredient cherry dump cake for dessert. If you haven’t made a dump cake before, it is exactly what it sounds like — you dump everything in a pan and it comes out tasting like you worked way harder than you did. This one is a family favorite and it disappears fast.

Honey Balsamic Grilled Chicken

This honey balsamic marinade glazed grilled chicken is so good — all my kids love it, and it happens to be Mediterranean diet friendly for Jason. I’m serving it with baked potatoes one night and roasted asparagus, so it does double duty on the weekly plan. The kind of meal that feels special without being complicated.

BLT Salad

This one is a lighter night — a BLT salad with some bread on the side and maybe a soup depending on what I’m in the mood for. Sometimes you just need a week where not every meal is a full production, and a BLT salad is perfectly satisfying for those nights. Bacon makes everything better, that’s just a fact.

Pork Fusion Wraps

My pork fusion wraps are a brand new family favorite and I cannot wait to share them properly. I first had these in a freezer meal and everyone went crazy for them — it’s an Asian-style pork with a savory sauce, cut into little bite-sized pieces, and you just wrap it up with shredded carrot, coleslaw, or lettuce. You can use chicken if you prefer, but the pork is really something. I am definitely making this one again and getting the full recipe posted for you.

Fried Rice Friday + Potstickers

Friday is fried rice — I haven’t decided on the protein yet but I’m doing fried rice — and I’m throwing in some frozen potstickers on the side. Easy, fun, a little festive, and exactly the kind of Friday night I am here for. Sometimes the best dinner is the one that takes twenty minutes and makes everyone happy.

Pork fusion wraps are an Asian-inspired dish — bite-sized pork in a savory sauce, wrapped up with shredded carrot, coleslaw, or lettuce. They’re light, flavorful, and completely crowd-friendly. And yes, chicken works great as a substitute if pork isn’t your thing — same sauce, same wrap, just a different protein.

How do you make a three-ingredient cherry dump cake?

A cherry dump cake is about as simple as dessert gets — cherry pie filling, a box of cake mix, and butter, all layered in a 9×13 pan and baked until golden and bubbling. No mixing, no fuss, just dump and bake. I’ll have the full recipe posted to the site soon, but trust me — once you make it, you’ll make it on repeat.

What do you serve with fried rice to make it a full meal?

I’m doing frozen potstickers alongside the fried rice this week — easy, delicious, and the kids always love them. You could also add egg rolls, a simple cucumber salad, or just a protein cooked right into the rice. Fried rice is so flexible that almost anything works as a side.
