The Pizza That Lets My Husband Keep Pizza Night

This Mediterranean Garden Pizza is how pizza night stays on the calendar at our house now that my husband eats Mediterranean — it’s basically your favorite Greek salad piled onto a crispy whole wheat crust. We start with a thin layer of regular tomato sauce, then fresh mozzarella, thin-sliced red onion, Kalamata olives, and olive-oil-tossed cherry tomatoes, and finish it after baking with fresh basil and a homemade honey-balsamic glaze. It looks a little fancy, it comes together fast, and nobody at my table feels like they’re missing out on pizza.

  • Pizza Stone Making pizza on stoneware makes a HUGE difference in how it turns out. This is a good pizza stone that gets the job done!

Method
 

  1. Make the balsamic glaze first so it has time to cool and thicken: in a small saucepan, stir together the balsamic vinegar and honey. Bring to a gentle simmer over medium heat and reduce by half, about 8-10 minutes, until it coats the back of a spoon. Set aside — it thickens more as it cools.
  2. Preheat the oven to 475°F and get your whole wheat pizza crust ready, stretched onto your pan or a preheated pizza stone.
  3. Toss the halved cherry tomatoes with a little of the olive oil and the salt; set aside.
  4. Spread the tomato sauce over the crust, then sprinkle evenly with the parsley, oregano, and garlic powder.
  5. Scatter on the red onion, Kalamata olives, and cherry tomatoes, then tear the fresh mozzarella over the top (or crumble on the feta). Drizzle lightly with the remaining olive oil.
  6. Bake at 475°F for about 15 minutes, until the crust is golden and the cheese is melted and bubbly.
  7. Straight out of the oven, scatter with fresh basil and finish with a drizzle of the honey-balsamic glaze. Slice and serve right away.

This pizza is built on my Whole Wheat Pizza Crust baked at 475°F, but it works on any crust you like — just bake according to your crust’s directions.
For a tangier, more classic Greek flavor, swap the fresh mozzarella for 2 oz of crumbled feta, or use a little of both.
The honey-balsamic glaze keeps in the fridge for up to 2 weeks, so it’s worth making a little extra. It thickens as it cools.
The basil and the balsamic glaze go on after baking so they stay fresh and bright — basil wilts and the glaze loses its shine if it goes in the oven.
Toss the cherry tomatoes in olive oil and salt before they go on — it seasons them and helps them roast instead of steam. Reduce the glaze low and slow; if it gets syrupy in the pan it’ll turn hard as it cools. Pull it when it coats a spoon. Tear the mozzarella rather than slicing it — the uneven edges melt into those pretty golden pools. Make a double batch of glaze and keep it in the fridge; it’s just as good on a salad or roasted vegetables.

My husband follows the Mediterranean diet, which leans on vegetables, olive oil, and a little cheese rather than processed, heavy foods — and this pizza fits right into that without feeling like a compromise. The crispy whole wheat crust holds up to all those juicy toppings, and the honey-balsamic drizzle at the end makes it taste like something you’d order out.

The trick to keeping the crust crisp is spreading the tomato sauce thin — I use plain tomato sauce, not jarred pizza sauce, because I’d rather season it myself with garlic powder, oregano, and parsley. From there it’s all about the fresh stuff: I tear up fresh mozzarella , scatter on red onion and Kalamata olives , and tuck in cherry tomatoes I’ve tossed with a little olive oil and salt so they roast up sweet. A Few Things That Make Mediterranean Garden Pizza Even Easier

  • Bake on a hot stone for a crispy bottom. A whole wheat crust loaded with juicy toppings can go soft in the middle. Baking on a pizza stone  at 475°F pulls the moisture out and gives you that crisp bottom — preheat it with the oven so it’s screaming hot when the pizza goes on.
  • Spread the sauce thin. This is the single biggest thing for a crispy crust. A thin layer of plain tomato sauce is plenty — too much sauce steams the dough and you lose the crunch.
  • Pat the mozzarella dry. Fresh mozzarella holds a lot of water. Blot the torn pieces with a paper towel before they go on so the top doesn’t end up watery.
  • Make the glaze first. Simmer balsamic vinegar  with a teaspoon of honey until it’s reduced by half, then set it aside — it thickens as it cools, so giving it a head start means it’s ready to drizzle the second the pizza comes out.
  • Basil and glaze go on after baking. Fresh basil scorches in a hot oven and the glaze burns. Add both the moment the pizza comes out so the basil stays bright and the glaze stays glossy.

What temperature and how long do I bake Mediterranean Garden Pizza?

Bake it at 475°F for about 15 minutes, until the crust is golden and the cheese is melted and bubbly. If you’re baking on a preheated stone, keep an eye on it toward the end — a hot stone can get the bottom crisp a minute or two faster. Add the fresh basil and honey-balsamic glaze right after it comes out, not before.

Is Mediterranean Garden Pizza actually Mediterranean diet friendly?
