Nacho night is the Friday dinner I keep coming back to, and honestly it might be the smartest thing I make all week. I brown the ground beef in my SENSARTE saute pan , I set out every topping I can find, and then I step back and let my crowd do the rest. No arguments about who gets the jalapeños. No complaints about too much sour cream. Everybody builds their own plate exactly the way they want it, and dinner is done in under 15 minutes. That’s nacho night, and once you try it, it becomes a standing Friday tradition.

Nacho Night

- 1 ½ lbs ground beef
- 1 packet taco seasoning
- 16 oz Tortilla chips
- 15 oz nacho cheese
- 2 cups Shredded cheddar cheese
- 1 cup Sour cream
- Jalapeños
- Sliced black olives
- Taco sauce
- Shredded lettuce
- Guacamole or avocado optional
- Salsa or pico de Gallo optional
- Refried beans optional
Method Start Cooking
- Season and brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Add the taco seasoning and a splash of water and stir to coat. Cook until the beef reaches an internal temperature of 160°F.
- Set out all your toppings on the counter or table — tortilla chips, nacho cheese, shredded cheese, sour cream, jalapeños, black olives, taco sauce, lettuce, guacamole, and anything else you love.
- Let everybody build their own plate. That’s it — nacho night is served.

Why This Nacho Night Works
This is one of those dinners where the less you do, the better it turns out. The whole concept of nacho night is that everybody is their own chef. You season and brown the ground beef — that part takes about 10 minutes — and then your entire job is to get every topping you own onto the counter and step back. The toppings do the rest. Nacho cheese, shredded cheese, sour cream, jalapeños, black olives, taco sauce, guacamole, lettuce — lay it all out and watch your crowd go to work.
What makes this work for a crowd is that there are no wrong answers. The person who only wants chips and cheese is happy. The person who wants the works — taco meat, nacho cheese, jalapeños, olives, taco sauce, and sour cream all piled as high as possible — is thrilled. Nobody’s plate looks the same and everybody’s satisfied. For a family of seven, that is genuinely worth its weight in gold. It’s the same everyone-builds-their-own magic behind my homemade calzones — just with tortilla chips instead of pizza dough.
The only actual cooking you do is browning the ground beef. Season it well — I use McCormick taco seasoning — and cook it through to an internal temperature of 160°F. The USDA recommends cooking all ground beef to 160°F to destroy any harmful bacteria. Once the beef is done, everything else is just setting it out. Dinner is on the table in under 15 minutes, and clean-up is simple because everyone grabbed exactly what they wanted.

A Few Things That Make Nacho Night Even Easier
- Brown the beef ahead. Season and cook the ground beef up to two days in advance, store it in an airtight container in the fridge, and reheat with a splash of water in the same pan. Nacho night goes from 15 minutes to 5.
- Warm the nacho cheese in the jar. Take the lid off the Ricos and microwave it in 30-second bursts, stirring between, until it pours easily. Keeps the chips crispy and means no extra dishes.
- Use a sturdy chip. Thin chips break under the weight of taco meat and cheese, which is frustrating when you’re trying to get the perfect bite. Cafe-style or restaurant-style chips are worth it.
- Lay toppings out in small bowls. Everybody can see what’s available, nobody is reaching across anybody, and clean-up is easy. I keep a stack of small colorful bowls just for nights like this.
- Don’t forget the cold drink. A frosted glass of Diet Coke or a margarita on a Friday turns nacho night into a vibe. The drink matters more than people give it credit for.

What toppings do you put out for nacho night?
I put out everything I can find. At a minimum I have nacho cheese, shredded cheese, sour cream, and taco sauce on the table. When I’m going all out — which is most Friday nights — I add jalapeños, sliced black olives, shredded lettuce, guacamole, avocado, pico de gallo, and salsa. The beauty of nacho night is that you use whatever you have. There’s no wrong answer when it comes to nacho toppings.
How do you season the ground beef for nacho night?
I keep it simple — a packet of taco seasoning and a splash of water, cooked right into the beef as it browns. That’s it. You can absolutely make your own taco seasoning blend with chili powder, cumin, garlic powder, and onion powder if you prefer, but on a Friday night I’m reaching for the packet every time. Season it generously so every chip gets a good bite of flavor.
Can I use something other than ground beef for nacho night?
Absolutely. Ground turkey works great and keeps things a little lighter. Shredded rotisserie chicken is another easy option — just toss it with taco seasoning in a skillet to warm it through and add flavor. You could even do a meatless nacho night with seasoned black beans or refried beans as the protein. The build-your-own format means everyone can customize around whatever protein you put out.
How much ground beef do I need for nacho night for a crowd?
For my family of seven, I use 1½ to 2 pounds of ground beef. The recipe makes about 8 servings, so figure roughly ¼ pound of ground beef per person as a starting point. If you have big eaters or want leftovers, lean toward 2 pounds. Keep in mind the chips, cheese, and toppings fill the plate too — nobody’s relying on the beef alone.
What kind of chips are best for nacho night?
I go with On the Border Cafe Style — they’re thick enough to hold a generous pile of toppings without going soggy, and the size is perfect for loading up. Thin chips tend to break under the weight of the taco meat and cheese, which is frustrating when you’re trying to get the perfect bite. Can I make the taco meat ahead of time for nacho night?
Yes, and this is a great time-saver if you want nacho night to come together even faster. Reheat it in a skillet over medium heat with a splash of water to keep it moist, or microwave it covered for a couple of minutes. The taco meat actually gets a little better as the seasoning has time to soak in.
What do you serve alongside nacho night?
Honestly, nachos are a complete meal on their own — especially with all the toppings. But if I’m rounding it out, I’ll put out a bowl of salsa and guacamole on the side, maybe a bag of frozen egg rolls thrown in the air fryer, or a simple green salad. My crowd also has strong opinions about an ice cold Diet Coke being the perfect nacho night drink, and I’m not going to argue with that.
