Doritos taco salad is the dinner I throw together when it’s too hot in Florida to even think about turning on the oven. It’s my best friend Michelle’s recipe — crunchy, cheesy, loaded with taco-seasoned beef and a big handful of crushed Doritos — and it was the very first meal my husband ever asked me to go get the recipe for. Ten minutes, one big bowl, and everybody at my table is happy.

Doritos Taco Salad

Ingredients
- 1 lb ground beef
- 1 oz taco seasoning 1 packet
- 2 heads romaine lettuce chopped
- 1 cup cherry tomatoes halved
- ½ cup onion diced
- ½ cup Sliced black olives
- 2 cups shredded cheddar cheese
- 7 oz Doritos crushed (about 1/2 party-size bag)
- 1 cup Catalina dressing about 1/2 bottle

Method
- Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Drain, then stir in the taco seasoning with a splash of water and simmer 2–3 minutes until thickened. You can use it warm — I never wait for it to cool.
- Add the chopped romaine to your biggest bowl. Top with the diced onion, halved cherry tomatoes, and sliced black olives.
- Crush the Doritos into bite-size pieces and add them in, along with the shredded cheddar.
- Add the warm taco meat and about half the bottle of Catalina dressing.
- Toss everything together well, pile it high on plates, and serve right away while the Doritos are still crunchy.

This Doritos taco salad works because it does the impossible on a hot night: it feels like a real, filling dinner without heating up the whole kitchen. The only thing that actually gets cooked is a pound of ground beef browned with a packet of taco seasoning — everything else is just chopping and tossing. On a Florida-in-July evening, that’s the whole reason it stays in our rotation.
The magic is in the finish. Right before serving, I crush up about half of a party-size bag of Doritos and pour on Catalina dressing — that sweet-tangy orange dressing is what pulls the whole thing together and makes people ask what’s in it. Warm taco meat, cold crisp romaine, sharp cheddar, and that crunch: it’s comfort food that happens to come together in one bowl.
Michelle handed me this recipe years ago, and I’ve made it more times than I can count. It’s the kind of meal my whole crowd asks for by name — not fancy, not exactly health food, just really, really good.
A Few Things That Make Doritos Taco Salad Even Easier
- Do all your chopping first. Get the romaine, onion, and tomatoes chopped on a big cutting board before the beef even comes off the stove, and the whole thing assembles in a couple of minutes.
- Add the Doritos and dressing last. Crush the chips and pour the Catalina on right before you toss and serve — that’s how you keep everything crunchy instead of soggy.
- Use the taco meat at least a little warm. I never wait for it to cool all the way. Warm meat against the cold lettuce is part of what makes this so good.
- Save a little plain taco meat aside. If you’ve got a kid or two who won’t touch a salad, scoop out a spoonful of seasoned beef before it goes in the bowl.
- Any tomato works. I use halved cherry tomatoes, but chopped Roma or grape tomatoes are just as good — use what you’ve got.

How do I know when the taco meat for my Doritos taco salad is done?
Don’t trust the color — brown doesn’t always mean cooked through. The USDA says ground beef needs to reach 160°F to be safe, so I just brown it all the way through, drain it, and stir in the seasoning. It only takes about ten minutes.
Can I make Doritos taco salad ahead of time?
You can prep every piece ahead — brown the meat, chop the veggies, shred the cheese — and stash them separately in the fridge. Just don’t toss it all together until you’re ready to eat, because the Doritos and dressing are what turn to mush if they sit. Assembly at the last minute is the whole trick.
How do I keep the Doritos from getting soggy?
Add the crushed chips and the dressing dead last, right before serving. If you’re feeding people in shifts, keep the chips in the bag and the dressing on the side, and let everyone add their own — that way the leftovers in the bowl stay crunchy too.
What dressing goes on taco salad?
Catalina is the classic here — that’s what Michelle used and it’s what I’ve always made it with. Western or a French dressing will get you the same sweet-tangy thing. Some folks use ranch or a scoop of salsa instead, so if that’s your family’s taste, go for it.
Can I use a different chip instead of Doritos?
Absolutely. Fritos, plain tortilla chips, or Cool Ranch all work. But Nacho Cheese Doritos are the ones that make it taste like the taco salad you remember from a church basement or a family reunion — that cheesy, crushed-chip flavor is kind of the point.
What kind of meat is best?
Regular ground beef browned with taco seasoning is my go-to. Ground turkey works if that’s what you keep on hand — just season it the same way. Leftover taco meat from the night before is honestly perfect for this.
How do I make Doritos taco salad for a big crowd?
This one scales beautifully — it’s built for a crowd. Double or triple the beef, lettuce, and cheese, and keep everything in separate bowls until it’s time to eat. Toss only what you’ll finish in one sitting so nobody’s stuck with a soggy bowl later.
