Carne Guisada Tacos — The Crockpot Dinner My Crowd Goes Crazy For
Dump It In the Crockpot and Thank Me Later
Every Thursday night, our house fills up. Our college girls come home — and they bring friends. It started as a simple family dinner and somehow turned into this beautiful, loud, wonderful crowd of hungry college kids piling around our table. I love it so much. It is one of my absolute favorite things about our week, and Carne Guisada Tacos have become my go-to dish for these Thursday nights.
I needed to use up some beef stew meat one week, went searching for something I could throw in the crockpot before our crowd arrived, and found this recipe. The first time I made it, it was such a big hit that I knew I would be making it again. Here’s the other thing I have to tell you — the recipe calls for eight ounces of tomato sauce, but the day I filmed the video, I thought I had tomato sauce and didn’t. What I did have was a ten-ounce can of green chile enchilada sauce. We are never going back. Trust me when I say: use the green chile enchilada sauce. You can thank me later.

Why Carne Guisada Tacos Work
Beef stew meat is affordable, widely available, and when you give it six to seven hours low and slow in my trusty Crock-Pot slow cooker, it transforms into something spectacular. The meat gets so tender it practically shreds itself. You just scoop it out, pour off most of the liquid (leave about a half cup — that’s your flavor), shred it with two forks, and put it back in to soak up all that goodness on warm.
The prep time is seven minutes. You coat the meat with a little oil, salt, and pepper, throw it in the crockpot, add the taco seasoning , garlic powder, minced onion, Better Than Bouillon with a splash of hot water, and your sauce. Put the lid on and walk away. The crockpot does all the work while you live your life. Carne guisada — which translates to “stewed meat” — is a classic Mexican and Tex-Mex dish with deep roots in South Texas cooking, and this slow cooker version keeps it crowd-friendly with pantry staples and a long, lazy simmer.

A Few Things That Make Carne Guisada Tacos Even Easier
- Use the green chile enchilada sauce. I cannot say this enough. My original recipe called for tomato sauce, but the green chile enchilada sauce swap is what makes this recipe legendary at our Thursday dinners. The flavor is brighter, slightly smoky, and a hundred times more interesting than tomato.
- Fry your corn tortillas in a little oil. We will never go back to plain corn tortillas. The outside gets this gorgeous golden crunch and the inside stays soft enough to hold everything together. Heat a quarter inch of oil in a skillet, lay a corn tortilla in for about 30 seconds per side, drain on paper towels.
- Don’t skip the Better Than Bouillon. A tablespoon of Better Than Bouillon Beef Base dissolved in a quarter cup of hot water builds the savory backbone of the whole dish. Bouillon cubes just don’t compare — once you have the Better Than Bouillon jar in your fridge, you’ll use it constantly.
- Reduce the liquid in the last 30 minutes. Take the lid off, turn the crockpot to high, and let some of the juice cook down. Then scoop out the meat, pour off all but about half a cup of the liquid, shred, and return the meat to the crockpot on warm. This step concentrates the flavor and keeps your tacos from getting soggy.
- Set out all the toppings and let everyone build their own. That’s half the fun when you’re feeding a crowd anyway. We serve ours with shredded cheese, lettuce, pico de gallo, sour cream, and pickled onions. The pickled onions especially — if you have never put pickled onions on a taco, stop what you are doing and go make some. The bright, tangy flavor cuts right through the rich savory meat.
Carne Guisada Tacos FAQ — The Questions I Get Every Time
What cut of beef should I use for Carne Guisada Tacos?
Beef stew meat is what I use — it’s pre-cut chuck, affordable, and labeled right at the meat counter. If your store doesn’t carry it, buy a chuck roast and cut it into 1-inch cubes yourself. Chuck has the marbling that turns into incredible flavor and tenderness after six hours low and slow. Avoid lean cuts like sirloin or round — they get tough and stringy in the crockpot.
Can I really substitute green chile enchilada sauce for tomato sauce?
Yes — and you absolutely should. The original recipe calls for 8 oz tomato sauce, but I now use a 10 oz can of Old El Paso green chile enchilada sauce . The flavor swap is a permanent upgrade. The green chile brings a slightly smoky, brighter heat that pairs beautifully with the shredded beef and crispy fried tortillas. Both versions are delicious, but the green chile is now my forever go-to.
How long does this take in the slow cooker?
Six to seven hours on LOW is the sweet spot. The meat is done when it shreds easily with two forks — if it still feels firm, give it another 30 to 60 minutes. In the last 30 minutes, take the lid off and turn it to HIGH to reduce the liquid slightly. I do not recommend cooking this on HIGH the whole time — the meat doesn’t get tender the same way.
Do I have to fry the corn tortillas?
Technically no — you can warm them on a dry skillet or microwave them between damp paper towels. But once you try a fried corn tortilla, you’ll never go back. The crispy shell holds up to all the toppings without falling apart, and the texture contrast against the soft, juicy meat is exactly what makes these tacos special. Heat about 1/4 inch of oil in a skillet, fry each tortilla 30 seconds per side until golden, drain on paper towels.
Can I make Carne Guisada Tacos ahead?
The shredded meat itself is even better the next day. Cook it the night before, store it in the fridge in its juices, and reheat on the stovetop or in the crockpot on warm before serving. Fry the tortillas fresh right before everyone eats — they don’t hold their crisp. The meat also freezes beautifully for up to 3 months in a freezer bag with some of the cooking liquid.
How much does this recipe feed?
Two to three pounds of stew meat feeds about 15 tacos, which works out to dinner for 6 to 8 people with two tacos each plus a side. For our Thursday college kid crowd I usually double the recipe and use a bigger crockpot. The meat also stretches further when you load up on lettuce, pico, and toppings.
What do I serve with Carne Guisada Tacos?
Mexican rice, refried beans, and a simple chopped salad with lime vinaigrette round out the meal. For a party tray, I just set out chips and salsa, queso dip, and let everyone build their own tacos. The toppings bar — sour cream, queso dip , lettuce, pico de gallo, pickled onions, hot sauce — is half the fun.
