Method
  Start Cooking 

  1. Heat a skillet or griddle over medium-high heat.
  2. Butter one side of each piece of bread generously — cover every single square inch. This is the key to a perfect crust.
  3. Place two slices of bread butter side down in the hot pan.
  4. Layer cheese and ham on top, then place the remaining bread slices on top with butter side up.
  5. Cook until the bottom is deep golden brown and crispy, then flip and cook the other side until equally golden. Reduce heat if needed to let the cheese melt through completely.
  6. Remove from pan and cut in halves or quarters.
  7. Dust generously with powdered sugar.
  8. Serve with raspberry jam for dipping and take a bite. Life changing.

My husband Jason used to make grilled cheese sandwiches at a little snack stand in college, and he taught me the most important thing about a great grilled cheese — butter every single square inch of the bread. Be generous. That is the foundation of this sandwich, and everything else is just the happy accident of someone deciding to add powdered sugar and raspberry jam to a ham and cheese.

A Few Things That Make a Knockoff Monte Cristo Sandwich Even Easier

  • Butter every single square inch. Jason’s rule from the college snack stand: not a swipe, not a suggestion — full coverage. Soft salted butter  spreads easier than cold. That coverage is what gets you the deep golden crust that holds up to the powdered sugar and the jam.
  • Medium heat, not high. The cheese needs time to fully melt while the bread browns. Crank the heat too high and the bread is dark before the inside is gooey. Medium-low to medium is the sweet spot — patience pays off here.
  • Keep the jam cold. The contrast of hot crispy sandwich and cold tart jam is the whole experience. Pull the jar straight from the fridge right before serving, not before you start cooking.
  • Prep everything before you start. Butter softened, bread out, cheese unwrapped, ham ready, powdered sugar in a small sieve. The sandwich takes five minutes once the pan is hot — you don’t want to be hunting for the powdered sugar mid-flip.
  • Hold on a wire rack , not a plate. If you’re making more than one or need to wait a minute or two before serving, set the finished sandwich on a wire rack so the bottom doesn’t steam and go soft. The crust is the whole point — protect it.
