Breakfast for dinner for my Thursday night crowd is one of my favorite things to pull off, y’all. Our college girls come over every Thursday, and they bring their friends with them — and the friends bring friends — and before I know it, I am feeding a whole lot of people who just came from class and are hungry. This week I went all in on the full spread, and I am telling you: there was not a crumb left on the table.

Thursday Night at the Longstreth House
If you’ve been around here a while, you know Thursday night is a thing at our house. Our college girls live close by, and Thursday is the night they come home for dinner — and they bring whoever happens to be hanging around with them that day. Sometimes that means three extra kids. Sometimes it means seven. I never really know who’s going to walk through the door until they do, and that’s part of the fun. My job is to have something warm on the table and enough of it to feed whoever shows up.
Breakfast for dinner is one of the easiest ways I know to do that. It feels special — most of these kids haven’t had a full breakfast spread since they left home — and it stretches about as far as you can stretch a meal. Pancakes, eggs, a casserole, and fresh fruit, and everyone goes home happy.

The Tater Tot Casserole — The Hearty Anchor
The anchor of this whole breakfast for dinner spread is a big pan of hearty, meat-and-potatoes breakfast tater tot casserole — sausage, cheese, eggs, all the good stuff. This is the one dish that makes sure nobody is leaving my table still hungry. It’s the meal that sits solid in college-kid stomachs and carries them through whatever Friday classes are waiting for them in the morning.

The Pancakes — Pearl Milling With My Secret Ingredient
Here is the thing I always tell people about the pancakes: I make them with Pearl Milling Company Original Complete Pancake & Waffle Mix (Shop on Amazon), the just-add-water version, and I am not the slightest bit embarrassed about it. Not only is it really affordable, but the flavor and the texture are actually my favorite. I have tried a lot of mixes and I keep coming back to Pearl Milling.
My one little secret? A splash of vanilla right in the batter. That’s it. That’s the whole trick. It makes the pancakes taste like you started from scratch at 4am, which I did not. When I say a splash of vanilla, I mean the real deal — I use Kirkland Pure Vanilla Extract (Shop on Amazon) because pure vanilla is worth it, every single time.
I get the BELLA XL Electric Ceramic Titanium Griddle (Shop on Amazon) going — the same griddle I use for Toast with the Most — and I’m a pancake-making fool, cranking them out as fast as I can before everybody gets here.
I mix the batter up in the big red Farberware mixing bowl (Shop on Amazon) you see me using all the time on camera — it’s the one that holds enough batter for a crowd without me having to make two batches.
Then I set out syrup, powdered sugar, whipped cream, and a bunch of different kinds of berries — strawberries, raspberries, blueberries, whatever else is looking good at the store that week — and everyone gets to dress up their pancakes however they want. That part is always fun.

The Eggs of My Life — In My New Ceramic Skillet
Okay. The eggs. I have to tell you about the eggs.
I recently got the SENSARTE Nonstick Ceramic Saute Pan (Shop on Amazon) and I am obsessed. It’s PFOA and PFAS free — no Teflon — it’s induction compatible, and it comes with a lid. I scrambled a whole big batch of eggs in it on Thursday night and they slid right out of the pan like they were on ice. Fluffy, light, no sticking, no fighting with the pan. Best scrambled eggs I have made in a long time. The eggs of my life, if we’re being dramatic about it — and I am.

Breakfast for Dinner — The Whole Spread, Gone in Minutes
Tater tot casserole. A mountain of pancakes. Scrambled eggs. Fresh berries. Syrup, powdered sugar, whipped cream. That was the Thursday night breakfast for dinner spread at my house this week, and every single bit of it was gone by the time the last kid headed back out the door. Empty pans, empty plates, full people — that’s the scoreboard I care about.
