The Best Homemade Coleslaw
Step Away From the Store-Bought Tub
Homemade coleslaw is one of those things people assume is a project, and I am here to tell you it takes about five minutes and one bag of slaw mix. I dump everything into a bowl, give it a good stir, let it chill, and that is it — no shredding a whole head of cabbage, no fuss. The magic is all in the balance: creamy mayo, a little sugar for sweetness, two kinds of vinegar for tang, and celery seed pulling it all together. Once you taste how crunchy, creamy, sweet, and tart it is all at once, that plastic tub at the store does not stand a chance.

Method
- Add the coleslaw mix to a large bowl.

- Sprinkle salt and pepper generously over the top — sprinkling it across the surface is the easiest way to season evenly.

What makes this homemade coleslaw work is that it hits every note at the same time. The mayo brings the creamy, the sugar brings just enough sweetness, the two vinegars bring the tang that keeps it from feeling heavy, and the celery seed adds that little savory backbone that makes people ask what is in it. Crunchy, creamy, sweet, tart — when a slaw lands all four at once, that is when it goes from a sad afterthought to the thing people come back to the table for.
It is also genuinely a five-minute job because I start with a bag of pre-cut slaw mix instead of shredding cabbage and carrots by hand. I used avocado mayo the day I filmed this — I have been keeping it on hand to stay a little more Mediterranean-diet-friendly for my husband Jason — but regular mayonnaise works just as beautifully, so use whichever you love.
And this is the side that earns its keep at a cookout. It is the thing I make to go next to ribs, pulled pork, and BBQ chicken, and it always disappears before the meat does. Make it once and the store-bought tub quietly drops off the grocery list for good.
A Few Things That Make This Coleslaw Even Easier
- Start with a bag of slaw mix. This is the whole shortcut. One bag of pre-cut cabbage and carrots means no shredding, no cutting board, no mess — just open, dump, and dress.
- Do not skip the chill. Even thirty minutes lets the cabbage soften slightly and the dressing soak in, and a full hour is even better. Straight out of the bowl it tastes a little raw; after a chill it tastes like coleslaw.
- Use both vinegars if you have them. Two tablespoons distilled white vinegar plus one tablespoon apple cider vinegar is my favorite balance, but if you are out of one, all of the other works just fine — I have done it plenty of times.
- Let the celery seed do the work. It is a small amount of celery seed , but it is the flavor people cannot quite place. Sprinkle the salt and pepper across the whole surface so they season evenly when you toss.
- Mix fewer dishes. When my dishwasher is on the fritz, I mix and serve the whole thing in a disposable foil pan and toss it after — no bowl to scrub, which matters when you are feeding a houseful.
Homemade Coleslaw FAQ — The Questions I Get Every Time
How long should homemade coleslaw chill before serving?
Give it at least an hour in the fridge if you can. Thirty minutes is the bare minimum — that is enough for the cabbage to soften slightly and the dressing to meld — but an hour is where it really comes together. I make mine early in the day and let it sit until dinner.
Can I make homemade coleslaw ahead of time?
Yes, and it is even better once the flavors have had time to marry. It keeps in the fridge for two to three days in a covered container. It is at its crunchiest the day it is made, so if crunch is your priority, aim for same-day; if flavor is, a few hours ahead is perfect.
How long can coleslaw sit out at a cookout?
Because it is a mayo-based salad, keep an eye on the clock. The USDA’s two-hour rule says cold perishable foods should not sit out longer than two hours — and only one hour once it is above 90°F, which is most of a Florida summer. The easy fix is to nest your serving bowl inside a bigger bowl of ice so it stays cold on the table. You can read the USDA’s cold-food guidance here.
What is the best mayo for homemade coleslaw?
Regular mayonnaise is the classic and it is wonderful. I have been reaching for avocado mayo lately to keep things a little more Mediterranean-diet-friendly for Jason, and it works beautifully here — you would never know the difference in the finished slaw. Use whichever you keep in your fridge.
Can I make it less sweet?
Absolutely — the sugar is there for balance, not to make it dessert, but it is easy to adjust. Start with half the sugar, taste after it chills, and add more if you want it sweeter. You can also lean on the vinegar a little harder if you like it more tart than sweet.
What do I serve with homemade coleslaw?
This is a cookout workhorse. It is made for pulled pork, ribs, and BBQ chicken, but it is just as good piled on a pulled-pork sandwich, next to burgers and hot dogs, or alongside fried fish. Anywhere you want something cool, crunchy, and a little tangy to cut through something rich, this is your side.
Can I make a big batch for a crowd?
Easily. One bag of slaw mix makes enough for about eight as a side, so just scale up by the bag — two bags, double everything else, and you are feeding a crowd. It is one of the cheapest sides you can put on a table, which is why it is always on mine when I am feeding a houseful.
