Curried Chicken Salad — Bright, Crunchy, and a Little Unexpected
No Offense to Grandma, But This One Raises the Bar
This curried chicken salad is the one that finally bumped my old standby off the menu. It’s got tender chicken, crisp apple, toasted pecans, a handful of craisins, and just enough curry powder to make people stop and ask what’s in it. I started making it years ago when I was throwing a lot of tea parties and got tired of the same old pecan chicken salad — I’ve tweaked it so many times since that it’s fully mine now, and I honestly don’t remember the original anymore. It’s bright and crunchy and fresh, and it’s just as happy piled on a sandwich as it is scooped onto crackers or spooned over a bed of lettuce.
🍗 This one’s in my collection of chicken recipes for a crowd — the ones I lean on hardest when there are a lot of people coming, gathered in one place.

Why This Curried Chicken Salad Works
Curried chicken salad sounds a little fancy, but it’s honestly one of the easiest things I make — the only real work is the chopping. You cook the chicken (or use up leftovers), dice everything small, and stir it all together with lime juice, mayonnaise, and a generous spoonful of curry powder. There’s no cooking once it’s assembled and no fussy technique, and it comes together in about fifteen minutes.
What makes it special is the mix of textures and that warm hit of a good curry powder . You get creamy from the dressing, crunch from the pecans and celery, a little tart-sweet punch from the apple and craisins, and that golden, cozy curry flavor tying it all together. It’s the kind of thing people remember — I can’t tell you how many times someone has asked me for this recipe after a shower or a tea party.
A Few Things That Make Curried Chicken Salad Even Easier
- Cook the chicken ahead — and give it some flavor. I cook mine with a little onion soup mix on top so the seasoning is built right in. If your chicken is plain, add the green onion and a pinch of salt so the salad isn’t flat.
- Chop everything small. This salad is all about the bite — you want a little apple, celery, and pecan in every forkful. Small, even pieces also help the dressing coat everything evenly.
- Be generous with the curry powder. Start with a teaspoon, taste, and keep going — it’s the ingredient that takes this from ordinary chicken salad to “wait, what IS that?” I usually go heavier than the recipe says.
- Don’t skip the craisins. That handful of craisins adds a tart-sweet punch that plays off the curry so well. (They’re the one thing I leave out for the lighter version — more on that below.)
- Mix it all in one bowl with a fork. Everything goes into one big bowl and gets folded together — no mixer, no fuss. Taste and adjust the curry before you serve.
Curried Chicken Salad FAQ — The Questions I Get Every Time
How long does curried chicken salad last in the fridge?
Curried chicken salad keeps well covered in the fridge for 3 to 4 days, and honestly it’s even better after a few hours — the curry has time to mellow into everything. Give it a quick stir before serving, since a little liquid can settle at the bottom. If you like to double-check these things, the FoodSafety.gov cold storage chart puts chicken salad at 3 to 4 days, which matches what I’ve always found.
Can I make curried chicken salad without mayo?
You sure can. Plain Greek yogurt swaps right in for the mayonnaise and gives you a lighter, tangier salad — that’s actually how I make it for my husband, who eats Mediterranean-diet friendly. You can also split the difference and do half mayo, half yogurt if you want the richness without going all the way. It’s a genuinely good version, not a sad substitute — in fact, I wrote it up as its own recipe: my lighter Greek yogurt chicken salad, with the full ingredient list and nutrition.
What kind of apple is best for curried chicken salad?
I reach for a crisp, tart-sweet apple — Honeycrisp, Cosmic Crisp, Gala, or Pink Lady are all great. You want a little tartness to balance the sweet craisins and enough structure to keep its crunch once it’s mixed in. Skip soft apples like Red Delicious, which tend to go mealy. Chop it small so you get a bit of apple in every bite.
Can I use rotisserie or leftover chicken?
Absolutely — this is one of my favorite ways to use up leftover or rotisserie chicken. I usually cook mine ahead with a little onion soup mix on top for extra flavor, but a plain rotisserie chicken works great; just add the green onion and a pinch of salt to make up for the seasoning. Canned chicken works in a pinch too, drained well. Two cups of chopped cooked chicken is all you need.
Is curried chicken salad spicy?
Not at all — curry powder is warm and aromatic, not hot. It brings a cozy, golden flavor rather than any heat. Start with a teaspoon, taste, and add more from there; I tend to go generous because that curry flavor is the whole point. If you’re nervous about it, start small — you can always add more, but you can’t take it out.
How do I serve curried chicken salad?
So many ways, which is exactly why I love it for feeding people. Pile it on soft bread for a sandwich, spread it on crackers for an easy lunch or a party appetizer, or scoop it onto a bed of lettuce if you want to keep it light and skip the bread. It’s a natural for tea sandwiches and finger sandwiches, and it doubles or triples beautifully when you’re feeding a crowd. Serve it in a lettuce wrap and it’s naturally gluten-free.
