Friday Night Burgers, Fries & Corn — We Made It Special Without Going Out
Friday night dinner at our house is something I look forward to all week. Instead of loading seven people into the car and spending a fortune going out, we made it special right here at home — burgers on the grill, oven fries seasoned perfectly, and fresh corn on the cob. My son Jonathan, who has Down syndrome, even helped me film it. It was a really good night. 🍔🌽
The secret to a great at-home burger night is keeping it simple and putting out enough toppings that everyone feels like they’re getting exactly what they want.
For the fries, I use regular frozen crinkle fries — nothing fancy. The trick is to spread them out on the pan, spray them generously with avocado oil (or any spray oil), and then hit them with a really good amount of seasoned salt. The oil makes the seasoned salt stick, and even though they’re just baked in the oven, they come out crispy and flavorful every time.
For the burgers, I kept it simple: a little Kinder’s The Blend on each side while they grill, five minutes per side. I’ll be honest — Jason turns the grill on and turns it off for me. I have no idea what temperature it’s at. What I do know is that those burgers came out perfect.
And the corn? Fresh corn boiled in a pot is one of those things I feel strongly about. There is nothing like it. Butter melting right on top, a little salt — done.

We set out all the toppings: lettuce, tomato (not for me — I am not a raw tomato person, but my husband and kids love it), onion, American cheese, mayo, mustard, and ketchup. Everyone built their own and nobody complained. That’s a Friday night win.
The best part of the whole night? My ice cold Diet Coke. Non-negotiable.
