Sweet potato enchiladas are one of those recipes that makes you feel like a genius — especially when you pull them straight out of the freezer on a busy weeknight and dinner is done before you can even think about what to make. My friend Melissa made these at our freezer meal party, and I have been so grateful ever since. No meat, no fuss, all the cheesy, saucy, satisfying flavor you want from a good sweet potato enchilada.

Method
 

  1. Combine sweet potatoes, corn, beans, onion, cumin, chili powder, salt and pepper.
  2. Spoon filling into tortillas and roll. Place seam side down in baking dish.
  3. Pour enchilada sauce over top and sprinkle with cheese.
  4. To bake fresh: Bake at 375°F until heated through and bubbly, about 25–30 minutes. Uncover near end if additional browning is desired.
  5. To freeze: Cover tightly and freeze before baking.
  6. To bake from thawed: Thaw in refrigerator. Cover and bake at 375°F until heated through and bubbly.
  7. To bake from frozen: Keep covered with foil. Bake at 350–375°F until center is hot, about 45 minutes.

Why These Sweet Potato Enchiladas Work

Here’s the thing about these sweet potato enchiladas — they work two ways. Make them fresh tonight, bake immediately, and they are a fantastic weeknight dinner for eight. Or assemble in a disposable aluminum pan , cover tightly with foil, and slide it right into the freezer for a night when you absolutely do not have the energy to cook. Either way, the result is the same: golden, cheesy, saucy sweet potato enchiladas that disappear fast.

The filling is simpler than you would expect. Roasted sweet potatoes bring a natural sweetness that plays perfectly against the savory black beans, corn, cumin, and chili powder. It is a vegetarian recipe, but I promise no one at your table is going to miss the meat. The sweet potatoes are hearty enough to carry the whole dish, and with two cups of shredded cheese on top and enchilada sauce poured over everything — this is comfort food that just happens to have no meat in it.

Melissa brought this recipe to our freezer meal party, and I was so excited to try it for the first time. If you have never done a big cooking session with friends where everyone goes home with a freezer full of meals, I cannot recommend it enough. This enchilada recipe is a perfect candidate — it assembles quickly, freezes beautifully, and feeds a crowd without breaking the bank.

A Few Things That Make Sweet Potato Enchiladas Even Easier

  • Roast the sweet potatoes ahead of time. Peel and cube them, toss with a little oil, and roast at 400°F for 25 to 30 minutes until tender. Cooled roasted sweet potatoes hold beautifully in the fridge for two or three days, so this is a great prep-ahead step that breaks the recipe into two easy sessions.
  • Use a disposable aluminum pan  if you are freezing. Assemble straight into the foil pan, cover tightly with foil, and freeze. When you are ready to bake, the whole thing goes from freezer to oven without an extra dish to wash.
  • Do not skimp on the cheese. Two full cups across the top is what gives you that golden, bubbly finish. A Mexican blend or sharp cheddar both work beautifully — use whichever is in the fridge.
  • Pour enough enchilada sauce. Roughly 1½ to 2 cups over the top, edge to edge. Skimping on sauce gives you dry enchiladas — better to have a little extra pooling around the edges than not enough.
  • Roll seam-side down. Spoon the filling into each tortilla, roll tightly, and place seam-side down in the pan. This keeps them from unrolling while they bake and gives you neat, clean enchiladas when you scoop them out.

Sweet Potato Enchiladas FAQ — The Questions I Get Every Time

What temperature and how long do I bake sweet potato enchiladas?

Bake fresh at 375°F for 25 to 30 minutes, until heated through and the cheese is bubbling and starting to brown at the edges. If you are baking from frozen, keep the pan covered with foil and bake at 350 to 375°F for about 45 minutes, then uncover for the last 5 to 10 minutes to brown the cheese on top.

Can I make sweet potato enchiladas ahead of time?

Yes — they are designed for it. Assemble the entire pan, cover tightly with foil, and refrigerate up to 24 hours before baking. Pull the pan out about 30 minutes before baking to take some chill off, then bake as directed adding 5 to 10 extra minutes if it is still cold. These also freeze beautifully unbaked, which is what makes them my favorite kind of freezer meal.

Can I freeze sweet potato enchiladas?

Absolutely. Assemble the whole thing in a disposable aluminum pan , pour the enchilada sauce over top, add the cheese, then cover tightly with foil and freeze before baking. Frozen enchiladas keep well for up to two months. To bake from frozen, keep covered and bake at 350 to 375°F for about 45 minutes until the center is hot, then uncover at the end to brown the cheese.

Can I use corn tortillas instead of flour?

You can, but warm them first so they do not crack when you roll. Wrap a stack of corn tortillas in a damp paper towel and microwave for 30 seconds, or warm them briefly in a dry skillet. Flour tortillas are more forgiving and roll without prep, which is why I default to them for this recipe.

Can I add meat to sweet potato enchiladas?

You can. Brown a pound of ground beef or shredded chicken and either mix it into the filling or layer it in along with the sweet potatoes and beans. But honestly, I love these as a vegetarian dish — the sweet potatoes and black beans are filling enough to carry the meal, and no one at my table has ever asked where the meat was.

What should I serve with sweet potato enchiladas?

A simple green salad, Spanish rice, or refried beans on the side rounds out the plate beautifully. I will sometimes do a quick salsa-and-chip situation alongside, especially if I am feeding a crowd. Sour cream, sliced avocado, and fresh cilantro on top take these from great to restaurant-good.

How do I scale sweet potato enchiladas for a crowd?

One pan feeds eight comfortably. To feed a bigger group, just make multiple pans — that is part of why these are a freezer meal party favorite. Double or triple the filling, roll into as many pans as you need, and you can bake them in batches or all at once if your oven is big enough. Disposable aluminum pans make this easy to scale without running out of bakeware.
