Chicken Mushroom Rice Bake — The Easiest Weeknight Dinner That Tastes Like You Tried
The Dish That Makes the Rice Cook Itself and the Whole House Smell Like Dinner
This chicken mushroom rice bake came to me as a new-to-me recipe and I am so glad I tried it. You stir the rice right into French onion soup and beef consommé, top it with butter and mushrooms and Parmesan, lay the seasoned chicken on top, and the oven does everything else. Forty-five minutes covered, twenty more uncovered, and you pull out a golden, bubbling pan of perfectly cooked chicken sitting on the most flavorful rice I have ever made. Five minutes of prep. I am not exaggerating.
🥘🍗 This one turns up in two of my collections — my casseroles for a crowd and my chicken recipes for a crowd — both gathered in one place for the nights I’m feeding a houseful.

Why This Chicken Mushroom Rice Bake Works
The magic of this chicken mushroom rice bake is the liquid. Instead of water or plain chicken broth, the rice cooks entirely in French onion soup and beef consommé . That beefy, savory flavor soaks into every single grain of rice as it bakes, and you end up with something that tastes like it took hours. The mushrooms soften right into the rice, the Parmesan melts into a golden crust on top, and the chicken stays incredibly moist because it is sitting on top of all that steam and flavor the whole time it bakes.
Season the chicken generously before it goes in — salt, pepper, paprika, onion powder, and garlic powder. Go generous on the onion and garlic powder especially. A sprinkle of Kinder's The Blend over the top is a great shortcut if you have it on hand. Then add the other half cup of Parmesan right over the top of the chicken before it goes in the oven covered. That first 45 minutes covered is what gets the rice cooking and the chicken tender. Then you pull the foil off and let everything go another 20 minutes until the top is golden brown and any liquid has fully absorbed.
In the video I mentioned that the rice toward the edges was a little more done than the center — just something to be aware of. Give it a stir before serving to redistribute everything, or try using Minute rice like I do in my No-Peek Chicken and Rice if you want an even more foolproof result. The beefy flavor from the soups is really what makes this chicken mushroom rice bake special.
A Few Things That Make Chicken Mushroom Rice Bake Even Easier
- Use Minute rice for the most foolproof result. Regular long grain rice works, but Minute rice gives you that no-fail, evenly cooked finish across the whole pan. The same trick I use in No-Peek Chicken and Rice.
- Be generous with the seasoning. Salt, pepper, paprika, onion powder, garlic powder — and go heavier on the onion and garlic powder than you think. The rice absorbs a lot of the seasoning as it bakes, so a light hand on the chicken means flat-tasting rice.
- Make a Mediterranean diet version on the side. One thing I love about this recipe is how easy it is to adapt — in the video you can see me making a skillet version for Jason with all the same ingredients, cooked in olive oil on the stovetop, with a brown rice packet on the side. Same flavors, Mediterranean diet friendly, comes together at the same time as the bake.
- Use a deep 9x13 with a lid . There is a lot of liquid in this bake before everything absorbs, and a standard shallow 9×13 can have you watching it nervously. The deep version handles it without sloshing, and the lid makes transport a breeze if you are bringing this to a friend.
- Stir the rice before serving. Even with a careful bake, the rice at the edges of the pan tends to cook a little more than the center. A quick stir right before you scoop redistributes everything and gives you a uniform texture across every plate.
Chicken Mushroom Rice Bake FAQ — The Questions I Get Every Time
What temperature and how long do I bake chicken mushroom rice bake?
Bake at 350°F for 45 minutes covered tightly with foil, then remove the foil and bake another 20 minutes uncovered until the top is golden brown and any liquid has been fully absorbed. Total bake time is 1 hour 5 minutes. The covered part is what gets the rice cooking and the chicken tender; the uncovered part is what gets you that beautiful golden Parmesan crust. Per USDA food safety guidance, chicken should reach a safe minimum internal temperature of 165°F — check the thickest part of the breast or thigh with a food thermometer before serving.
Can I use chicken breasts instead of thighs?
Yes — the recipe works with either. Boneless skinless chicken thighs stay a little more forgiving because of the higher fat content, but boneless skinless breasts work beautifully too. Two pounds either way, and the steam from the rice keeps them moist whichever you pick.
Can I make chicken mushroom rice bake without the beef consommé?
The beef consommé is what gives this chicken mushroom rice bake its signature deep, beefy flavor — it is not a regular ingredient I would substitute. If you absolutely can not find it, two cans of beef broth will get you most of the way there, but you will lose some of that concentrated savor. Consommé is in the soup aisle right next to the French onion, usually on the bottom shelf.
Can I make chicken mushroom rice bake ahead of time?
You can assemble the pan up to 24 hours in advance — stir the rice, soups, and mushrooms together, top with butter and half the cheese, lay the seasoned chicken on top, finish with the rest of the cheese, cover tightly, and refrigerate. When you are ready to bake, take it out about 30 minutes before to lose some chill, then bake as directed adding 5 to 10 minutes to the covered time.
What kind of rice should I use?
Either long grain white rice or Minute rice works. Long grain gives you a slightly heartier texture; Minute rice gives you a more foolproof, evenly cooked result. I recommend Minute rice if you are making this for the first time — it takes any uncertainty out of the bake time. Brown rice and wild rice take much longer to cook and will not finish in the same time frame, so stick with white.
What can I serve with chicken mushroom rice bake?
The rice and the chicken together make a complete plate, so really all you need is one green side. A simple green salad with Italian dressing, roasted broccoli, or steamed green beans round it out perfectly. If I am feeding a bigger crowd, I will add a basket of dinner rolls because the savory pan juices are made for sopping up.
How many people does chicken mushroom rice bake feed?
One 9×13 pan feeds eight comfortably. To stretch it for a bigger crowd, double the recipe across two pans rather than doubling in a single oversized pan — the rice cooks more evenly in one-pan-deep portions. Two pans bake in the same oven at the same time and feed 16, which is what I do when I am bringing this for a group.
