No Boiling, No Fuss, Just Pure Lasagna Magic

This simple lasagna recipe is my secret weapon for feeding a crowd — and now it’s yours too. I made this batch the night before a church potluck and it came together so fast I almost felt guilty. Almost. There is no boiling the noodles ahead of time, no complicated steps, no hours of labor. You brown the meat, mix up your ricotta, layer it all together in a pan, and slide it in the oven. The uncooked noodles cook right in the sauce while the lasagna bakes, and the result is a bubbly, cheesy, hearty lasagna that feeds a crowd and tastes like you worked on it all day. I made mine in a disposable aluminum pan because we were taking it to the potluck after church — no hauling a heavy dish back home, no cleanup, just walk in and be a hero.

Method
  Start Cooking 

  1. Brown the ground beef in a skillet over medium heat. Season with oregano, garlic powder, minced onion, salt, and pepper while cooking.
  2. Once the meat is cooked through, add the jar of spaghetti sauce. Fill the empty jar with 1 cup of water, shake it to get every last bit of sauce, and add it to the skillet. Stir to combine. Set aside.
  3. In a medium bowl, mix together the ricotta cheese, egg, 1 to 1½ cups of the mozzarella, and parsley until well combined.
  4. Preheat oven to 350°F.
  5. In a 9×13 pan (or disposable aluminum pan), pour 1 cup of meat sauce on the bottom and spread it around to coat evenly.
  6. Lay 3–4 uncooked lasagna sheets on top of the sauce.
  7. Spread ⅓ of the ricotta mixture over the noodles as evenly as possible.
  8. Add 1 cup of sauce and spread over the ricotta layer.
  9. Repeat the layers two more times: noodles, ricotta, sauce.
  10. Pour any remaining sauce over the top of the final layer to make sure all the pasta is covered.
  11. Top with the remaining 1 to 1½ cups of mozzarella cheese.
  12. Cover tightly with aluminum foil.
  13. Bake at 350°F for 1 hour.
  14. Remove the foil for the last 15 minutes if desired, to get the cheese golden and bubbly.
  15. Let the lasagna rest on the counter for 15 minutes before cutting and serving.

Why This Simple Lasagna Recipe Works

If there is one dish I reach for when I need to feed a crowd without losing my mind, this simple lasagna recipe is it. It has been in my rotation for years and it never fails — not at potlucks, not at church dinners, not at weeknight dinners when I need to feed seven people and still have enough energy to make it to bedtime. It is easy on the grocery budget, too — I added up every ingredient in a pan and it fed ten people for just $15.73, about $1.57 a serving.

The key that makes this so easy is the no-boil method. You do not cook the noodles ahead of time. They go in raw, layered right into the sauce, and they cook perfectly in the oven as the lasagna bakes. The extra cup of water you add to the sauce jar and shake in is what makes this work — it creates moisture and steam inside the pan that cooks the pasta through while everything bakes together. The noodles come out perfectly tender every time.

One confession from the video: I ran out of mozzarella mid-assembly and had to sub in some cheddar. You know what? Nobody noticed. Nobody ever notices. That’s the beauty of a cheesy, saucy lasagna — it is incredibly forgiving. Use what you have.

A Few Things That Make Simple Lasagna Even Easier

  • Season your meat generously. I season the ground beef while it browns — garlic, salt, pepper, oregano, and a generous amount of minced onion . That seasoning goes all the way through the lasagna and makes every bite flavorful. Don’t be shy.
  • Use your favorite jar sauce. There is no shame in a great jar sauce, and my family has a favorite we use every time. You can use whatever brand you love — the seasonings you add to the meat are doing most of the flavor work anyway.
  • Layer evenly. When you spread the ricotta mixture, take your time and get it as even as you can. It doesn’t have to be perfect, but the more evenly distributed it is, the better every slice will be.
  • Cover tightly with foil. This is important — the foil traps the steam that cooks the noodles. Remove it for the last 15 minutes if you want golden bubbly cheese on top, but don’t skip the foil for the main bake.
  • Let it rest. This is the hardest part. Let the lasagna sit on the counter for 15 full minutes before you cut into it. It will hold together so much better and every slice will come out clean.

Simple Lasagna Recipe FAQ — The Questions I Get Every Time

What is a simple lasagna recipe with no boiling the noodles?

This is exactly that. You skip the boil-and-drain step entirely. Regular uncooked lasagna noodles go straight into the pan, and the extra cup of water you add to the sauce jar creates the steam that cooks them while the lasagna bakes. Cover tightly with foil so the steam stays in, and 60 minutes later you have perfectly tender noodles, no extra pot to wash.

Why is the sauce so watery in this simple lasagna recipe?

That’s by design. The dry noodles absorb all of that liquid as they bake. If you used a normal thick sauce without the extra cup of water, the noodles wouldn’t cook through. Keep the foil sealed tight so the steam stays in the pan and does its job. By the time it comes out of the oven, the sauce will be rich and fully absorbed — I promise.

Can I make simple lasagna ahead of time?

Yes — this is one of my favorite make-ahead meals. Assemble the whole thing up to 24 hours in advance, cover tightly with foil, and refrigerate. When you’re ready to bake, let it sit on the counter for about 20 minutes to take the chill off, then bake at 350°F for the full hour. Tip: if you’re making it more than a few hours ahead, you can hold off on the top layer of mozzarella until right before baking so it stays fresh and melty.

Can I freeze simple lasagna?

Yes, and it’s one of the best meals to freeze. Assemble the lasagna in a disposable aluminum pan, cover tightly with foil, and freeze before baking for up to three months. When you’re ready, thaw it overnight in the refrigerator and bake at 350°F for the full hour plus an extra 15–20 minutes. This is my freezer trick for meal trains, new mamas, and busy weeks I can see coming.

What kind of pasta sauce works best for lasagna?

I use Ragu Chunky Garden Combination  — it’s been my family’s go-to for years. The chunky style adds texture and body to the dish once it bakes down. Any 24 oz jar of marinara your family loves will work — just don’t skip the extra cup of water you add to the jar. That’s the part that makes the no-boil method work.

What if I run out of mozzarella halfway through?

I have done this. More than once. The first time it happened I panicked, grabbed the bag of cheddar I had in the fridge, and finished the lasagna with a mozzarella-cheddar blend on top. Nobody noticed. Nobody ever notices. A cheesy, saucy lasagna is incredibly forgiving — use what you have. Mexican blend, Italian blend, Monterey Jack, even a little Parmesan stretched out with whatever else is in the cheese drawer. It’s going to be delicious.

How do I know when the lasagna is done baking?

The lasagna is done when the edges are bubbling, the cheese on top is golden, and a knife slid into the center goes through the noodles easily. I bake it covered for 45 minutes, then pull the foil off for the last 15 minutes to get that golden bubbly top. Then — and this is the hardest part — let it rest on the counter for 15 minutes before you cut into it. It will hold together so much better.
