Cuban Inspired Sausage and Rice

A quick, flavorful weeknight dinner ready in just 20 minutes! Smoky sausage with caramelized peppers and onions, served alongside buttery yellow rice and seasoned black beans. Cuban-inspired comfort food that feeds a crowd without any fuss.

Ingredients
  

  • 2 tablespoons avocado oil or olive oil
  • 2 lbs smoked sausage turkey recommended, sliced
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 can black beans
  • 1 package yellow rice Vigo recommended
  • 2 –4 tablespoons butter
  • Kinder's The Blend seasoning or salt, pepper, and garlic powder
  • Cuban bread crusty sourdough, French loaf, or ciabatta (optional, for serving)

Method
 

  1. Boil water and butter according to the rice package instructions. While rice cooks, heat black beans in a small saucepan, season with Kinder's The Blend, and let simmer on low.
  2. While rice is cooking, chop the sausage, onions, and peppers. Heat oil in a large skillet over medium-high heat.
  3. Add smoked sausage first and cook until caramelized. Add peppers and onions, season with more Kinder's The Blend, and cook 5–7 minutes until cooked to your taste.
  4. Once rice is done and sausage and peppers are ready, plate everything up and serve. Enjoy with crusty bread if desired!

Turkey smoked sausage keeps this lighter without sacrificing any flavor — but any smoked sausage works great here.
Get some good caramelization on the sausage before adding the peppers and onions — that's where the flavor is! Don't rush that first step. Vigo yellow rice is the go-to brand here. Follow the package directions exactly for the best results. Cuban bread is the ideal pairing if you can find it at your local store. In Florida it's easy to find — but a crusty French loaf or ciabatta works beautifully too.
