Spring Break Meals for My Family of 7
Spring break meals at the Longstreth house hit different when all seven of my people are home at the same time. My two college girls are back (they only live about a mile away, but still — having them home home is everything), the kids are out of school, and Jason is off from the college for the week. The house is full, the refrigerator is being aggressively emptied, and my heart is completely full. This is my favorite kind of chaos.
When the whole crew is home, the meals go up — breakfast, lunch, AND dinner every single day. On a normal week I can coast a little on lunches. Not during spring break. But honestly? I am not complaining one bit. Getting to feed all seven of my people three times a day is one of my very favorite things. Pull up a chair — here’s what I made today.
What I Made Today — Spring Break Meals for a Family of 7
Breakfast: Pigs in a Blanket, Scrambled Eggs & Fresh Strawberries
Every single time the kids are on break, pigs in a blanket is the request. Every. Single. Time. And I love it because it is easy, it makes everyone happy, and there is something so fun about breakfast food that feels a little special. I paired them with scrambled eggs and a big bowl of fresh strawberries, and breakfast was a hit.
Lunch: Hot Dogs
Lunch during spring break does not need to be complicated. Hot dogs. Done. Everyone is fed, nobody complained, and I saved my energy for dinner — which absolutely deserved it.
Dinner: Tacos with Home-Fried Corn Tortillas
Okay, let’s talk about our new obsession. We have always loved taco night — it’s right up there with Tater Tot Casserole as one of our most-requested family dinners, but we recently started frying our own corn tortillas at home and it has completely changed the game…and honestly, spring break meals don’t get better than this. We are never going back. The texture, the flavor — it takes tacos from a regular weeknight dinner to something that genuinely feels like a treat.
For our taco filling, I make ground turkey with black beans, and I use whole wheat tortillas for Jason since he’s eating Mediterranean diet-style these days. Everyone customizes their own, the table is loud and happy, and it is exactly what dinner should look like.
Today was a good day. All seven of my people around the table, three meals cooked with love, and a house that is beautifully, wonderfully full. This is what I cook for — this exact feeling. From my table to yours. 🧡
