Sourdough Day 6: Willynilly Is a Straight A Student

Sourdough Day 6 is here and I am happy to report that Willynilly is absolutely crushing it. Look at all those bubbles! On Day 6, bubbles on the surface mean the yeast is waking up and doing exactly what it is supposed to do. Willynilly is not quite strong enough to bake with yet — he needs more feedings and more time to build strength — but he is right on track. Honestly? I could not be more proud of our little guy.

Here is what Willynilly looked like on Day 6: bubbles all over the surface, and on the inside, fibrous and active — just the way a sourdough starter is supposed to look at this stage. The yeast is alive and waking up, and the smell is getting stronger too. All great signs that things are moving in the right direction.

Today’s feeding looked like this: I discarded 120 grams of starter, then fed Willynilly with 60 grams of whole wheat flour and 60 grams of water, keeping the ratio at 1:1:1. I zeroed out the scale, measured carefully, stirred everything together, wiped down the edges of the jar, and put him away until tomorrow.

If Willynilly is going to be a straight A student, then I am going to try my best to keep up with him. Day 6 is in the books — and we are getting closer every single day. See you on Day 7!
