- 2 racks baby back pork ribs membrane removed
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup barbecue sauce I used Sweet Baby Ray's mixed with Kinder's Hickory Brown Sugar

Extra Large Baking Sheet You need a good large pan to put the wrapped ribs on

Basting Brushes The easiest way to apply the sauce is with a basting brush

Aluminum Foil The ribs need to be tightly wrapped in aluminum foil before cooking
Method
- Preheat the oven to 275°F.
- Make the rub: In a small bowl, mix the brown sugar, paprika, garlic powder, onion powder, salt, and pepper until well combined.
- If your ribs still have the membrane on the back, remove it. Rub both sides of each rack heavily with the seasoning, pressing it in tight so it sticks.
- Wrap each rack tightly in foil and set on a baking sheet. Bake at 275°F for 2½ to 3 hours, until fall-apart tender.
- Carefully unwrap the ribs and raise the oven to 425°F. Slather about 1 cup of barbecue sauce over the ribs, as thick as you like.
- Return the ribs to the oven uncovered and bake at 425°F for 15 to 20 minutes, until the sauce is caramelized with a few crispy bits. Slice and serve.

I like Sweet Baby Ray's mixed with Kinder's Hickory Brown Sugar barbecue sauce, but any barbecue sauce you love will work here. Costco baby back ribs usually come with the membrane already removed, which saves you a step. Store leftovers covered in the fridge for up to 4 days; reheat wrapped in foil at 300°F until warmed through.
Don't rush the low-and-slow bake — 2½ to 3 hours at 275°F is what gives you that fall-off-the-bone texture. If you want even more caramelization on the sauce, run the ribs under the broiler for the last 2 to 3 minutes, watching closely so it doesn't burn.
