Ingredients
- 4-6 boneless skinless chicken breasts uncooked
- 1½ cups Minute Rice uncooked
- 2 cans cream of chicken soup condensed
- 1 packet onion soup mix

Pyrex 9x13 Baking Dish This is the best dish when making it at home or taking to a potluck (it has a great lid)

9x13 Disposable Pans For when you are preparing this for somebody else or you just don't want to have to wash a pan
Method
- Preheat oven to 325°F.
- Pour uncooked Minute Rice into the bottom of a 9x13 pan.
- Add cream of chicken soup on top of the rice. Mix together and spread evenly across the pan.
- Lay uncooked chicken breasts on top of the rice mixture.
- Sprinkle the onion soup mix packet evenly over the top of the chicken.
- Cover tightly with foil. Do NOT peek.
- Bake at 325°F for 2½ hours. Do not lift the foil during baking.
- Remove from oven, carefully remove foil, and serve immediately.

Notes
Do not peek — ever. The steam sealed inside the foil is what cooks the chicken and makes the rice fluffy and flavorful. Lifting the foil even once can ruin the dish. Trust the process!
Using disposable aluminum pans makes this the perfect meal to deliver to a friend. No dishes to return! This recipe doubles easily — just use two pans.
